    This is so simple I don't know why I didn't think of it sooner.

    Place some fried pork skins on a plate. Cover them with grated cheese (I use longhorn cheddar) and then sprinkle some sliced jalapenos or green chile on top of each pork rind. Nuke in microwave until cheese is melted.

    These are great and one of my favorite snacks now.

      Sounds yummy! I've also used and enjoyed the Atkins Crunchers chips for nachos and salsa on occasion.
