  • Milkshake!!

    1 cup unsweetened vanilla almond milk (1 net carb)
    1/4 cup canned puree pumpkin (plain, no spices) (2 net carbs)
    handful ice cubs
    1/8 tsp xantham gum (0 net carbs)
    1 scoop vanilla protein powder (depends, mine is 2 grams carbs)
    Sweetener (sweeten to your preference) (carb count depends, I use liquid splenda and count it as 1 carb)

    Possible additions to change the flavor
    *vanilla extract
    *2 Tbsp cocoa powder
    *Scoop of peanut butter
    *berries (is you're that high up on the rungs)
    *pumpkin pie spice or cinnamon

    This is sooooooo yummy. The xantham gum helps to thicken it to a nice creamy milkshake texture so that it's not runny. The carb count is based on my own personal ingredients of about 6 net carbs before the addition of any other add-ins. Your counts will depend on what you use, but at least this gives you an idea of what the count could be about. The scoop of protein powder really helps to make this filling. Sometimes I have it in the morning for b-fast or later in the day for a snack. You can't taste the pumpkin at all when you add in other flavors, the pumpkin just helps give some extra nutrition and body to the shake. I hope you like it!!

    Strictly speaking you need level three for almond milk - so to be induction clean a combination of cream and water would work fine.
    I make a shake like this too. I like to freeze the pumpkin sometimes. I always add some cream because I need some fat in these shakes. I like to add caramel liquid splenda for taste.

        Puree pumpkin is a godsend! That's a bummer. I haven't been able to find it in grocery stores, but I did find some at a Wal-Mart (not a superstore, just a regular one) and I found some at a Grocery Outlet. It does seem to be scarce. I've also noticed that the texture is a little different this year, the puree seems almost softer in texture. Hmmm, don't know.

          I went on line and found pumpkin, Libby's a case of # 10 cans (which I could never use up) was $99 dollars and a case of organic was $89.
          I don't need pumpkin that much.
