  • Vegetable Juice?

I am a long time low carb dieter, so I am not new to the Candida diet. But, I do have a question regarding vegetable juice.

Is homemade vegetable juice allowed? I switched over from the Atkins diet to the Mercola diet about a year ago, and really enjoyed making my homemade organic vegetable juice with celery and cucumbers in the morning for breakfast with a couple of raw organic eggs. I used the juice to help Alkalize the body. I was EXTREMELY acidic, and I have heard acidity can cause yeast overgrowth.

Now, I know vegetables are allowed, but, would vegetable juice cause a problem because of the volume of natural carbs found in the Celery and Cucumbers?

Just and FYI, I do NOT juice fruits, or high carb vegies like Carrots. Only cucumbers, and celery, and sometimes I would put romaine in it too.

    Thanks for any help.

    Re: Vegetable Juice?

Provided you limit what you put into your juicer to the allowed types and quanties of veggies, it's legal. The only risk is that by blending the vegetables, you break down the fiber and your body can process it faster, producing a glycemic spike. If you're only using VERY low carb vegetables like the ones you described, though, then I find it hard to imagine that you could cause a spike.
