After following the Gold Standard diet faithfully for 2 months, I finally passed the spit test. After the first week, I felt so much better than I had before. This was my main reason for following the diet, not dropping weight. I've always been a slow loser & I don't really expect that to change, even with lots of exercise.
The other day, I made a mushroom dish that also had a little bit of parmesan cheese in it. It was heavenly! This was the first time I ate off of the GS diet. When a week has passed by, I will redo the spit test to see if that meal causes me to relapse into a yeast-haven or not. If not, I will make the same mushroom meal again & then wait another week on GS.
My reason for doing this is so that I can figure out what foods I can eat & those I can not. Since mushrooms & parmesan cheese are my two favorite items that went away with GS, they are the ones I chose to reintroduce back into my diet. After one month passes of being yeast-free, I will reintroduce something else & play the wait and see game.
If at anytime I end up positive for the yeast again OR start feeling terrible again, I will go back to the GS diet until I'm clear again. I will then know that mushrooms and/or parmesan cheese is not in my life plan for eating. I will then try something else.
I just wanted to let ya'll know that yeast can be overcome with persistance & sticking faithfully to the GS diet. Everyone is different in how they respond & how long it takes to be yeast-free. For me, this first round took 2 months. We'll just see how long I can remain that way.
