    I have been trying the salad everyday, lettace, strip of pepper, cucumber 3 pieces and 1/2 stalk of celery. I make a homemade dressing of Olive oil and white vinagar. If I eat it at noon, I have no difficulties with digestion, but if I eat it at early evening, I get indigestion again.

    Today I changed to 2 1/2 cups of veggies, summer squash with cheese (microwaved) and 1/2 cup of broccoli with melted butter. My carbs are a little higher than they have been in the past when I had just 1 cup of the salad and veggies with dinner.

    Does Broccoli take the place of a salad? Is there any veggies that can be used other than lettace? I have been on the program by the book and my sugars are great since starting Atkins.

    I find cheeses are difficult to chart but I try to get in either heavy cream or cream cheese in small quantities at night. I put some water in the blender with 2 eggs with vanilla, 1-2 splenda and freeze it in 4 1/2 cup containers. I have been measuring the cream so as to not go over my quota.

    Summer is here and I wanted something that resembles ice cream.

    For salads, I change up the lettuce - romaine, iceberg, spring mix or I use spinach. I also like sauteed mushrooms (fantastic with steak) and peppers - they are still salad veggies, but nothing like salad once sauteed. I like your idea of summer squash nuked with cheese...sounds fast & yummy.
