Why in DANDR does Dr. Atkins to exercise no more than 5 times per week? I'm confused.

Yep, rest days are critical. You are better off exercising 5 days and taking 2 days off (staggered throughout the week or after particularly tough days) to let your body repair + rest. You wont make it exercising every single day (or at least, exercising intensely every single day). Your body gets stronger and your muscles grow larger when they heal from a workout, not by doing a workout. With no rest, you overtrain and tear your muscle down quicker than your body can build it back up.
I use a pretty good system- 3 days hard training followed by a day of rest, 2 more day back on, 1 more off, and start again.
So, I would train hard tuesday, wed, thurs, and rest fri. Sat, Sun back to training, resting again on monday.
Works like a charm, and your body isnt pushed to its limits too soon
