  • Anyone familiar with kombucha

    I was wondering if anyone drinks kombucha on Maintenance (or any other phase besides Induction). I have a starter in the fridge, but can't find any info on how many carbs are in an average serving of plain kombucha made at home. The storebought ones have about 15 grams in a 8.5 oz bottle, but they are usually sweetened with fruit juice. If someone has experience with this, I would be very interested, as I know that kombucha tea has many health benefits, and I have loved drinking it in the past, but never while low-carbing. Thanks!

    I loved kombucha...before this woe. Now, I guess there is a possiblity that the sugar is digested (by the tea, not you) during the fermentation process, but I can't be sure. I wonder if you could find nutritional info online.

    I used to make my own kombucha and kefir as well.

        I like kefir, and had it when i was on the dairy rung..kind forgot about it lately actually.

        never heard of kombucha though?

              Kombucha is a fermented tea. That's the best way I can describe it. It's supposed to encourage the growth of healthy bacteria in your body, and it's thought to have liver cleansing properties. It's made with Black Tea, sugar, and a "scoby" which is what a sourdough starter would be to sourdough bread.

              I think the fermentation process would burn away most of the sugar. When the tea is ready, you have a fizzy, almost vinegary tasting drink. It's not sweet. It's a health tonic of sorts.

              BTW, I'm not positive that fermentation is really the right word to be using...I just cant think of a better word.

                I think it might be fermentation, taht is what kefir is as well. sounds like it is to tea what kefir is to milk or yogurt?

                    and is this suppose to taste good? this does not sound appealing to me at all.

                        Hmmmmm.... don't think I'll go out of my way to find it... though it does seem to have lots of "good health" properties.

                          Wow, thanks for all the input, folks! I like the part about kombucha being to tea what kefir is to milk. I am still on Induction, but maybe as I progress along through OWL I might try a 'kombucha rung' and see what happens.

                            It's just about the greatest thing going. When I got a lung infection last year they gave me mega doses of anti-biotics. Afterward I tried the usual yogurt and that didn't work to get things back to normal, then I tried pro-biotics and that didn't works I finally tried drinking 1/2 bottle of Kombucha a day and it fixed things up in no time at all.

                            And Jimmie, although it doesn't sound good, your body really loves it and next thing you know you enjoy the taste.
