I'm no dietician...but I'd think that if you ate eggs and cheese you'd go a long way towards getting most nutrients. Then there's fish... though you probably won't want to eat that...
Legumes are very nutrient dense too.
I'm sure someone very knowlegeable will be along to help you pretty soon.

Out of curiosity, why are you asking about a vegetarian diet on a low carb forum? See, the vegetarian diet is a relatively high carb diet because the protein sources are mainly from plant sources.
By the way, I used to be a vegetarian/vegan at one point. So I have a bit of knowledge about that diet.

I was a vegetarian for 4 years and stopped to hop onto this. I plan to edge myself back into vegetarianism when I'm at my goal weight. While vegetarian diets are often high carb (most folks nab lots of bread, pasta, etc) it is easily done on Atkins - with some tweaking and planning, like the previous poster said.
You utilize a lot of egg dishes, can often still accomplish weight loss by swapping low-carb fake meat choices (check out packages, Morningstar "bacon" is the same carbs as real bacon, etc), tofu and as the diet progresses, more cheese/beans/nuts/legumes.
Its possible! And props to you for wanting to be healthy and ethical at the same time =)
