    erythritol

    I was wondering if anyone had heard of erythritol? I've been looking for stevia, but have not been able to find it. However, I did find a sweetener called erythritol. I found an article here Net Carbs that says it has zero carbs.

    So I'm wondering - Has anyone tried it? Does it bring sugar cravings? Does it really have zero net carbs and is "legal" to use on Atkins?

    I would love to be able to have something sweet that does not cause any problems - but part of me wonders if it is too good to be true.

    I use erythritol all the time with no problems. It has a "cooling" effect on your tongue that isn't pleasant by itself, so it is better mixed with another sweetener. I use about half liquid Splenda and half erythritol to sub for sugar in my recipes and it's always very good.

        Yes, erythritol has no impact on insulin levels, unlike some other sugar alcohols.
