If he can eat ricotta cheese, I make this: 1/3 cup ricotta cheese mix together with 1 beaten egg, add a pinch of salt. Nuke in microwave for 1-2 minutes. It develops a "cream of wheat"/grits like texture and the taste is bland enough that you can add sugar substitute to it or make it savory by adding a tablespoon of salsa or pizza sauce or crumbled bacon.
Someone once suggested crumbling up pork rinds in a bowl, adding cinnamon and splenda and adding heavy cream (dilute with water for a more milk-like consistency). I tried it once - it tastes sort of like I imagine Cinnamon Toast Crunch would taste like (I've never had it so I wouldn't know for sure). You might not want him eating that every day, though, b/c it's kind of junk food-y. But it's a nice change now and then.
On the weekends I make flax buns, split them and toast them. Add butter and it's sort of like a rye-bready, whole-grainy english muffin-type thing.
Breakfast doesn't have to be breakfast food. Some deli turkey or chicken or roast beef wrapped around cheese or veggies would work...so would a bunless burger, or a chicken breast or some BikerGoddess pizza, or whatever non-breakfast food he does like.
