    Ok, I consider myself an excellent cook...today I thought I would venture off into omelet land and try to make one. Well that was a disaster. I used TOO many eggs, burned the outside...raw in the inside and I was even cooking it on low heat. Its official, I am the queen of fried and scrambled eggs...omelets are a nightmare. I will let Perkins make them from now own lol.

    Ha ha. I've done that! Just remember to stir the eggs in the pan until they start to congeal (just like scrambling, and we KNOW you can do that LOL), and then add your filling, wait awhile and flip. Also, try not to use more than 2-3 eggs, so they cook thru.

    I worked as a cook for 6 yrs, and a secret the restaurants never tell you is that they finish their omelets under a broiler!

      I put the egg in and brown it on one side then flip it over before putting in the fillings! that way it is definataley cooked on both sides! Biggest trick IMO is to have the right pan though. A real omelet pan makes all the differnce in the world! :yes

        Yes, I agree with motherofgizmo. The right omelet pan is important, anything too big, will not work. I also flip my omelet, and then put my fillings in, fold, and it always works out perfect. Watched a chef at a buffet brunch making omelets, and made notes!!! Flipping them though was a challenge in the beginning, many landed on my stove, or the floor!

            Haha I bought an omlet pan...so I think Perkins will make them for me from now on =).

              Don't give up so easily! It takes a little practice~!

              here are some insturctions to help you make it easier, eggs are cheap! experiment a little more before you give up!

                I agree, the number one thing to make a good omelet, is the pan. I have a nice pan set. Te-Fal, they are expensive, but well worth it! You dont even need cooking spray to fry eggs on them! I love it!
                Use only 2-3 eggs, make sure the pan is hot before you add the egg mixute in...as it cooks, work the sides inward so the raw in the middle escapes onto the pan. Wait a few minutes and flip it. Then add your insides and fold........you got a perfect omelet! :icondance

                  I don't understand this whole flipping concept - I mix up the eggs and stick um in a pan over medium heat, cover it, wait a minute, throw in the insides, cover, wait for it to melt (since i always put in cheese), fold and put on plate. Done.
