  • I'm out of ideas

    So I am officially out of ideas in the kitchen. I used to really enjoy cooking before this WOL but now every time that meal time comes around I just groan. Today I ate scrambled eggs for breakfast, lunch, and dinner. That should do wonders for my cholesterol.

    Ok, so please help. What are some of your favorite recipes. I need all the help I can get.

    Mmmmmmmm! Eggs!!!

    I hear you regarding ruts, girlfriend! Our teammate chixrule is the mistress in the kitchen. Where is that lady?

    As an aside, I really like puttint a serving of pepperoni on a plate with a slice of pepperjack, a few sliced olives and some diced purple onion.

    Nuke for 1 minute.

    It tastes just like pizza toppings.

      But you are going to fall into a way of thinking i've seen people do. DO NOT let this discourage you. There are tons of recipes on the board and in the recipe section. You shouldn't get bored with food at all! leave that to the low-fat/low-cal folks.

        I used pork skins with grated cheddar cheese and a few jalapeno slices as Nachos! Just nuke the cheese for a second or so...
        Chicken battered in parmeasan cheese baked.
        Just mix up crazy salads.

          I love tuna & mayo & swiss or gouda cheese! The cheese adds a nice texture to it, which I've come to find tastes better then just a boring old tuna sandwhich anyday.. who needs toast!!


          I also LOOOOVE spinach cooked in virgin olive oil and feta cheese. If you add a few slices of small tomatoes, it makes it even more delicious! (depending on how much carbs you want to eat, I don't add tomatoes cuz i'm not sure if it's induction friendly, but i'm sure you can in other stages..)... but I love spinach and feta cheese! (just be sure to count the carbs here)

          My MIL sometimes makes a recipe of brussel sprouts and artichoke hearts, mixed with parmesan cheese and some butter. I think these are good for later stages of atkins, but I don't want to risk the high-carb veggies in my extended induction. Plus, even if I eat one delicious brussel sprout, I find that I crave more and more... but they are delicious and I believe they're doable on atkins.


          You could also try to mix it up with spices and herbs, (just be careful of counting carbs as they can sneak up on you in condiments)

            Why not go harass Nurselady in the Food & Cooking Chat forum. She often complains that it gets too quiet over there, and she is a WEALTH of food ideas. Go pick her food brain, she would absolutely love you for it!

              Steak with cream cheese and fried onions...especially thin sliced steak with the onions and cream cheese rolled up inside! Green peppers add a nice touch...think of it as a "Philly Steak Roll"! YUMMY!

              Chicken with swiss cheese and two slices of fried bacon...sauteed mushrooms if you can have them.

              BLT in a lettuce wrap with mayo.

              Grilled Seasoned Chicken, chedder cheese, and real bacon crumbled on a fresh greens with 1 T. Ranch Dressing...

              Shrimp Skewers with Green and Red Bell Peppers, Onion wedges, Tomato, Mushrooms grilled in a Foreman Grilling Machine....

              OK, my mouth is watering. Time for breakfast!

              Here's one to try...Chicken chunks and Turkey Brats (1 carb per serving)chunked fried in olive oil with the same veggies named above and some broccoli and cauliflower, then seasoned with chili powder and red pepper flakes, and simmered in half a can of Chicken broth and half a can of diced tomatoes...For the rest of the family, serve it over whole grain rice.

                I found a great recipe for Creamy Cucumber Salad. It's something different and new for me and i love it.

                Creamy Cucumber Salad

                Ingredients:
                1 1/2 C. Mayo (Real)
                1/2 C. Splenda (less if you like)
                2 to 3 TBSP. Vinegar
                A couple of dashes of Salt & Pepper
                4 Medium cucumbers peeled and sliced
                1 onion sliced


                How to Prepare:
                Mix together and refigerate in an airtight container overnight

                  Salmon patties~~ Mix salmon with minced spring onion, an egg, parmesan cheese (the cheap kind in the can), salt, pepper. Fry in a bit of olive oil and butter till both sides are crisp. Serve with fried cabbage. (Shredded cabbage fried in olive oil with fresh garlic and spring onion, salt, pepper) YUMMY!!!

                  Hamburger steaks topped with a slice of Monterey jack and grilled onions, mushrooms. Serve with a salad a a couple deviled eggs and your set! (Another favorite)!

                  Chili salad! (Shredded lettuce, half of a diced roma tomato, chopped spring onion, topped with chili ( a mixture of ground beef, chili powder, cumin, salt, pepper, and the other half of the roma tomato, diced. Drain browned ground beef and add ingredients with about half cup of water, reduce and serve).

                  Roast chicken with mock mashed potatoes... Great leftover chicken for next day.

                    This weekend I made the best meal I've had in a long time. I made a spaghetti squash (super easy), grilled a chicken breast, and made a cheese sauce (super super easy) to pour over the top of it. It was kind of a cross between chicken alfredo and mac and cheese. And I am no creative cook. I can't wait to make more cheese sauces to go with other foods!

                    And the other food that I am addicted to is the tuna melt recipe I got here somewhere. Mix up your tuna as you like it (I just add a little mayo), put it on top of some pork rinds, and sprinkle cheese on top and microwave to melt the cheese. The pork rinds get a little soft and become sort of a toast like consistency. YUM! Even without the pork rinds its good. I LOVE TUNA!

                      Recipe Ideas

                      I just found a recipe for a chicken dish served at Carrabba's that I love! I figured out the net carbs and it ends up being about 4 for each serving.

                      A Copycat Recipe for Carrabba's Chicken Bryan - Grilled chicken breast topped with caprino cheese and sun-dried tomato, basil, and lemon butter sauce.
