Stir fry!! It's cheap...easy...meat goes much further.
I buy leg quarters and cook them off the bone, then shred the meat and place in baggies and freeze. Then add to your veggies in a bit of olive oil and some seasoning.. (Love Cajun Seasoning) Example: Brocolli, yellow squash, canned mushrooms from dollar store 2/$1.00, cajun seasoning and add chicken at the end and viola!! Yummy dinner and fairly cheap.
I also buy cheap cuts of beef and then ask the butcher to grind it for you. It doesn't cost anything extra and you can actually pay less than the already ground beef.
To the veggie of your choice you can add ground beef, chicken, tuna, or even the small bags of shrimp. We get a bag of shrimp for $2.99 at Aldi's and Sav-a-lot also has them for around the same price.
Do you like salmon? Dollar General sells pink salmon for $1.50 in a can. Mix with an egg, a chopped spring onion, salt, pepper, and a bit of parmesan cheese (the kind in the green can) and shape into patties...fry in a bit of oil and butter and these are the best little salmon patties you ever ate. You can do the same with tuna if you prefer it...
I came up with a 'Stretch your hamburger to feed 8' meal that was a huge hit at my house.
1 pound ground beef
2 Summer squash cubed
1/2 red onion diced
1 stalk celery chopped
1 small can mushrooms
1 teaspoon chili powder
Salt
Pepper
Paprika
Garlic powder
Onion powder
Brown ground beef, drain, add veggies, seasoning, and half cup of water...simmer till all the water has cooked out.
Serve over bed of shredded lettuce..top with shredded cheddar and sour cream (Opt.)
