  • I was invited to a Pizza Party

    I'm off work ... till after Sept. 12th. My boss called me today and said one of the children was leaving and their dad ordered pizza for a going away party today. She invited me to come. She apologized because they were having pizza. She has been trying to do Atkins and having trouble keeping motivated.

    I told her, "Great, I'll cook up an Atkin's pizza and be right over!"

    She was thrilled. Her and I ate our pizza and the kids ate theirs. She said all morning she'd drove herself nuts because she wanted to participate in the party ... but didn't want to cheat.

    When I left, she expressed her thanks for reminding her that she doesn't have to be left out of life-events due to the food that is being served....she can substitute ACCEPTABLE foods and join the fun. Thats why I love Atkins, Every party, celebration and get together can be made into an Atkins Friendly event. You just have to plan. I'm glad I had a chance to go to the party and share our low-carb PIZZA with a friend.

    How great that not only were YOU able to enjoy the pizza party but you enabled HER to do so too. You are such a good friend and role model Becky

      That is such an awesome, story! You are helping someone else see that this is truly a way of eating to suit any occasion! It's things like this that make you so special! It's no wonder you are a model for this way of eating to all those who know you!

            Thank you for posting this. My nieces 4th birthday party is Sunday and they are serving pizza. I was just going to eat before we left for the party. Now I think I will just bring my own "pizza". I wasn't going to cheat, but I knew it would be challenging.

                WOW sounds awesome. YOU got to enjoy a social gathering and stay on track and you taught your friend how to get thru tuff things. THATS too cool

                    Very cool!

                    What kind of pizza did you make? I know there are several ways of doing a "crust" but curious if I'm missing out on a recipe!

                        I just made the very basic pizza. Lined bottom of pyrex dish with hamburger/oregano and browned in oven for crust. When it was done, I dabbed off the grease, and spread 1 tablespoon of low-carb spaghetti sauce over entire crust. Then, I added mushrooms, pepperoni, crumbled bacon, green peppers, and grated cheese. I put this in the oven and let the cheese melt. Thats all.

                            Yum!!

                            In the past I've sauteed large slices of onions, peppers and mushrooms in butter before adding to a pizza. I think I'll do this with your method along with a salad for dinner tonight. Thanks for the inspiration and the reminder not to have to just pick the toppings off when at a pizza party!

                              I have made it that way and it is rally very good. I love pizza, too. Pizza and cucumbers w/ blue cheese dressing are the best foods ever made
