My husband just called from Wyoming and said he will be swinging through Utah and will eat dinner with me. We discussed what he wanted and he said meatloaf. I said okay. Then, he added...."Make it an Atkins meatloaf" I usually make an Atkins one with a few ground up pork rinds and I make his with bread crumbs. Well, he has tried mine and said he likes it better.
I'm finding that when I make substitute foods (mashed cauliflower instead of mashed potatoes, fried cauliflower instead of rice, ground pork rinds instead of breading, crustless pizza, and egg noodles instead of flour noodles,) that my family likes it better. I used to bread chicken for them, but now they like it with parmessan cheese sprinkled on it the way I eat mine.
And...I used to have to cook everything two ways, THEIR way and MY way. But, it seems now that they see that I am not eating anything that is too strange or bizarre...so they enjoy eating the Atkins way. Our Thanksgiving is going to be ATKINS FRIENDLY. I already tried the stuffing recipe that was posted here and it was delicious, so that will be included this year. The only thing that they want that I won't eat is the corn. So, its going to be a great feast with no temptations at my house.
