  • 20 minute or less meals

    Hi there. I restarted a couple of weeks ago. For some reason, I am having a hard time coming up with easy meals to make. Last time it seemed much easier to do this WOE. Anyways, I have been eating salads, shredded chicken, and omelets for the last 2 weeks. Can anyone help me with some easy meals.

      What's easy for me is that Sundays is designated as my cooking day. I make up several salads and several induction-appropriate dishes and section them out into containers. Then during the week I only have to reheat in the microwave.

      Is something like that possible for you??

        MOG- Unfortunately, I don't have a George Forman grill. I used to but I never liked the meals I cooked in it. I think I usually overcooked the meat so I got rid of it. Maybe I should invest in a new one. I got one when they first came out. What do you usually cook on there??

        SoftNRed- Thanks for the recipe link. I will check it out. Unfortunately, I don't have a day that I can make a batch of food and I am not much for leftovers.

          bacon cheeseburgers (bunless or wrapped in lettuce) with a side of green-beans or salad.

            here are two of my favorite meals;
            tuna with Mayo and a slice of swiss cheese!!

            Spinach -cooked on a frying pan with a bit of virgin oil, feta cheese, and optionally some sliced up tomatoes

              How about giant stuffed mushrooms? Grilled portabellos topped with your favorite stuffed mushroom filling (my favorite is Italian sausage, cream cheese, shredded Italian cheese, chopped mushroom bits, garlic and your favorite herbs/spices). You could even make the filling ahead of time and keep it in the fridge, then just grill the mushrooms and top with warmed filling and presto!


              5 pounds away from a little reward - pedicure!!

                Some tuna salad with a cucumber (slice and use the cucumber like crackers).
                You can always nuke a chicken breast to cook it, my mom says it only takes a couple minutes... I forget how long a couple is.. I think 4??
                Fish in a frying pan is a standard dinner for me at least once a week.
                Throw together a stirfry with veggies, a meat of some type in a big pan...
                I'm a single parent with a toddler, I could be the Princess of quick meals.

                  Nothing I eat takes more than 20 mins!

                  Bacon (or sometimes minute steak) grilled and some eggs or mushrooms for brekkie, with the occassional omelette.
                  Protein (meat/chicken/fish) and big salad for lunch.
                  Protein (as above) and stir fried veggies for dinner.

                  Quick, easy and tasty, and I'm using everything fresh.

                    Fast Fish Chowder

                    Buy a box of frozen fish fillet. (just fish no breading) I like Boston Bluefis
                    Buy a bag of frozen shell fish like prawns or scallops (optional)
                    Chop up a small onion and a rib or two of celery and saute in butter a few mintues
                    Dump in a can of diced tomatos and a can of water, bring to a boil
                    While you wait for the boil chop up some veggies in small bits, like broccoli, turnip, cauliflower, or cabbage
                    Unwrap the frozen fish and dump in the soup
                    Add any other frozen seafood you like.
                    Add the veggies you chopped up.
                    Boil for 16 minutes

                    Dish up in to pretty bowls. Add a bit of butter and a splash of cream to your bowl along with salt and pepper to taste. Hot and Yummy.

                    Freeze the left overs in single services for quick dinners from the microwave.
