  • Brussels sprouts and pine nuts???

    OK folks I saw this and wanted to try it. Can you let me know if its induction safe? Im thinking it's ok but I don't remember reading anything about the Brussels sprouts and pine nuts...

    2 pounds Brussels sprouts
    1 tablespoon chopped fresh thyme leaves or 1 teaspoon dried
    1 tablespoon chopped fresh oregano leaves or 1 teaspoon dried
    1/4 cup pine nuts
    1 teaspoon garlic powder
    1/2 teaspoon kosher salt
    1/4 teaspoon freshly ground black pepper
    1/4 cup extra-virgin olive oil
    1/2 cup balsamic vinegar

    Heat the oven to 425 degrees F.
    Cut the bottoms off the Brussels sprouts and trim off any damaged outer leaves. Soak them in a bowl of cold water for a few minutes and drain them well. Cut them in half and put them into a roasting pan. Add the thyme, oregano, pine nuts, garlic powder, salt, and pepper. Add the olive oil and vinegar and toss everything well to coat. Put the roasting pan into the oven and cook for 20 minutes. Give everything a good stir and cook for 25 minutes more, or until the Brussels sprouts are nicely browned and caramelized. Serve immediately.

    DA allows brussel sprouts in the 1 cup a day veggie list during induction.
    No nut during induction, none of them!
    Have you got the list of the acceptable food with you? stick to it!

      Sounds like a great 'OWL rung 3' recipe though!! I have never thought of putting them with brussel sprouts but we do have sprouts with chestnuts at Christmas so I bet it would be a great taste.
      Now I know I have pine nuts in the larder - have I got any sprouts in the freezer I wonder!!!

            Ok just made this WITHOUT the pine nuts and used coocked bacon to keep the crunch and it's a keeper...

            I happen to be one of those weird people who like brussel sprouts.

              Your alternative recipe version wiht the bacon sounds just as nice, Rhinohd. I have copied them both into my recipes database for future use!

                isn't the balsamic vinegar sugary???

                    Good spot Sharron!! I hadnt notice the word 'balsamic'
                    I threw away my expensive bottle of that when I started induction a few years ago!
                    Rhinohd, did you use ordinary vinegar with yours?

                        I didn't think it would be too bad, and then I used it on some veggies and WOW...I LOVED IT..and then I looked at the carbs..........

                        NO WONDER I LOVED IT SO MUCH!
