  • Have to share my yummy dinner

    I know we have a recipe section but I wanted to make sure my CC friends saw this.

    I love chicken salad sandwiches, so tonight I made an Atkins one. I mixed a can of chunck chicken with a little mayo, some salt, pepper, dill, and a stalk of celery finely chopped. I mixed all of this together and dropped it into a hot frying pan with a little bit of oil. I covered it in cheddar cheese. Once it was hot and the cheese melted I used a spatula to transfer it to my plate. It was so yummy.

    I didn't miss the bread at all.

    What did you have for dinner tonight?

    A lot of folks don't like brussels sprouts, but I do! I sauteed them with bacon last night!
    Started again: 10 November 2007!

    No stats for two weeks.

      OH! Well, you'd love what i did 2 days ago... put my atkins tuna salad made with mayo, salt, pepper, dash (table top), celery, ... on top of tomatoes with ceddar cheese on top on a oven safe plate and put it under the broiler til the cheese was all bubbly... mmmmmmmmmmmmmm
      sooooo good! like a tuna melt! yum!

        Oh! and today made a hamburger bun out of the flax muffin recipe... only instead of cinnamon I put in garlic and onion salt and less splenda... put the whole thing on a wide based flat bowl with some Pam... turned into the perfect bun for a burger...! Sliced it in 2 horizontally so I had a top AND a bottom... lettuce, tomatoe, cheese, mayo, mustard... thought I had died and gone to heaven!

          I had aubergine(eggplant) nuked smothered in cheese and bacon and grilled til crispy with steak, o my it was DELISH!! its the first time ive ever had aubergine and Elizellen told me how to cook it, definitely a new staple for me!!

            Ooooh I love this thread. Awesome ideas that I need to try out.

            Hopejoy.... I am definately doing the tomatoe under the broiler thing. That sounds awesome.

            RIMeduasa....I fry bacon with cabbage with bacon all the time and love it. I will have to try it with brussel sprouts. I don't know why I haven't tried it yet.

            Emma....I don't usually like eggplant, but now you have me wanting to give it one more try. I think I might like it if it was grilled crisp.

              You ladies have made me hungry. Thanks for the ideas, I am not to creative when it comes to mealtime. Gonna have to try some of these meals.

                Heres one I eat everyday.

                8 ounces of hamburger fried in a pan with McCormick Italian Seasoning , add 1 cup of mushrooms when it starts getting done and it steams them with a lid over it, then 1 cup of lettuce and tablespoon of mayo (in the picture I used 2 cause I really really needed it lol) this dish is so good and has always helped me to lose weight rapidly and the taste (atleast for me) is top notch!

                  That looks great Monroe, I am trying it tonight. I love hamburger meat anyways so that is right up my alley. thanks for sharing.

                      Looks great to me too, Monroe!

                      The past week seems to have had me on the go all the time with literally no time to sit down for dinner. I've been making "sandwiches" using romaine lettuce for the "bread". I've used sliced chicken, cheese, mayo, onions. Spread all that on the big romaine leaves, roll up like a burrito and eat on the run. It's saved me about 3 nights this week!

                        I'm gonna have to try that, i've been meaning to try something like that but I don't know how to measure out a big leaf of lettuce lol. Do you make like a bunch at the same time and put them in the fridge and pick them up on the go?

                            LOL.. I'm not sure about the lettuce leaf either. The romaine ones are really big and I've been estimating it at a half cup. At least it looks like if you rolled it up and put it in a measuring cup that's what it would be!

                            So far I've just been making them as I eat them, but I was thinking about doing some ahead. It's nice having things like that ready in the morning to take for lunch.

                            This afternoon I put some tuna salad in a leaf and it was good too. I think the crunch and the fact that I'm holding it like a sandwich makes me feel like I'm eating more than I am. Weird, huh? Whatever works though!
