    Good morning CC'ers. Supposed to be a beautiful day here, yeah!

    Have a wonderful day if you can.
    40 year old male 6' 3"

    What I know:
    1-Atkins WOE/WOL plan works
    2-I need to always work on the behaviors and triggers that make me over eat.
    3-Atkins WOL is part of the puzzle, but is not the entire thing.
    4-Self-deprecation only feeds our inner ego and not in a good way.

      Good morning everyone. I definetly slept in a bit this morning. I finally have a day off! Although I have an interview for a second job in an hour. Wish me luck! And good luck to all today in any of your endeavors!

      I know I wasn't supposed to step on the scale till Monday but it was taunting me this morning so I stepped up.... and realized I had a whooshie! I lost 3 lbs in the past 3 days! Woohoo! Bringing me down to 228 lbs with a grand total loss of 75 lbs!

                  Wow, it looks like it's a weight loss day. Congrats Sugar and Missy to your lbs gone forever!
                  I thought I'd share a recipe with everyone today. My DH who's doing this WOE with me leaves for work so early he doesn't have time for breakfast so yesterday I came up with this breakfast casserole he can grab and take with him. He went crazy for it and so did my older sons. They're begging me to keep making it. For those of you on induction, it's induction friendly as well.

                  At BJ's they sell a very large roll of jimmy dean sausage, 32 oz raw. Brown that up in a pan. While that's browning beat 18 eggs, chop 1/2 cup red peppers, 1/2 cup scallions and I added 2 tbsp heavy cream, add to the eggs. When the sausage is done put it into a 13 x 9 pan which is already sprayed with pam. Pour the egg mixture over the sausage. Sprinkle with 2 cups shredded pizza cheese. I cooked it @ 350 for about 45 minutes, until a knife comes out clean in the center. When it cools cut it into 8 slices. The slices are pretty big so I ended up cutting them into 16 slices and put 2 each (1/8 pan) into ziploc bags. They went crazy for them this morning! They said they hope they weren't to much trouble to make because they wanted me to make them all the time. The carbs wren't bad either.
                  1 32 oz roll sausage 12
                  18 eggs 10.8
                  1/2 cup red peppers 2.3
                  1/2 cup scallion 2
                  2 tbsp heavy cream 2 ( I don't know if that little made a difference in the taste)
                  2 cups cheese 8
                  Total 37.1 / 8 = 4.6 carbs per 1/8 pan

                  you can put whatever veg's you want in there, just make sure you count the different carbs.
