Good night Chick ... and good day to all the fellow CC'ers who are checking-in today. I've been creating, rather experimenting lately making legal (unbaked) desserts. So far I've made a "Raspberry-Cream-Dream" which is suitable for OWL and contains mainly Cream Cheese, Heavy Cream, Greek Jogurth, Raspberries, Sweetener and an some lemon juice.
Yesterday eve I made an induction legal "Heavenly-Lemon-Cream" which is just made of Cream Cheese, Heavy Cream, Lime and Lemon juice, lemon peel and sweetener ... one portion has only 4 netcarbs! It's fluffy and creamy and just... heavenly! I even freeze them, so I have a substitute for ice cream!
Delicious...

Last day of work for me this week, then on to a busy weekend! Im gonna need some mental strength on Saturday as we are going to a birthday party/4th of July celebration at the in-laws and there will be tons of temptation there!
Off to prepare the daily meals and get together my water for the day. Gonna be a light day as I seem to have caught the flu from my son. Have a great day fellow CC'ers!

We can't go back & make a brand new start but we can start from now and make a brand new end.
3 large eggs
1 pkg Splenda
dash of salt
pinch of cream of tartar
3 ounces cream cheese (not Tbsp!) Do not soften!
Preheat oven to 300 degrees.
Separate the eggs and add Splenda, salt, and cream cheese to the yolks. Use a mixer to combine the ingredients together. In a separate bowl, whip egg whites and cream of tartar until stiff (if you're using the same mixer, mix the whites first and then the yolk mixture). Using a spatula, gradually fold the egg yolk mixture into the white mixture, being careful not to break down the whites. Spray a cookie sheet with non-stick spray and spoon the mixture onto the sheet, making 6 mounds. Flatten each mound slightly.
Bake about 30 minutes (You want them slightly softer, not crumbly). Let cool on the sheet for a few minutes, and then remove to a rack and allow them to cool. Store them in a bread sack or a ziplock bag to keep them from drying out.
Hi khesan, really frustrating to stall. Do you use Fitday.com? It has cleared the fog a little for me. Thought i was eating 25 carbs and found out it was more like 60 Helped me to list my foods for a day too.
