  • having some issues ((RANT))

    I have been having some problems getting in my veggies over the last few days. I am very much a carnivore at heart, and I try really hard to get them in by incorporating them into the dish, but I am seriously having some issues getting enough of them into the dishes to have what I am supposed to have everyday. I am not wasting carbs on other foods, but since I am not eating my veggies I am ending up with hardly any carbs a day (i had 2 carbs today). I know this isn't healthy, and I know I just need to buckle down and eat them.

    Other than that, I am doing great I believe. I take my vitamins every morning. I can only walk a short time everyday (I am very large and tire very very easily), but I am walking everyday and increasing my time every week that I am on the wagon by 5 minutes. I get all my water in (192 oz per day) as well. If I could only get those blasted veggies down.

    Sorry about the rant. I'm just a little frustrated.

    I understand completely. I too love the meat side of the diet and have only a few favorite veggies. Here's one thought on increasing the veggies: find a couple you like (for me it was stirfrys with just onions and peppers) and then put them in everything. It is better if it is a salad veggie (like peppers rather than onions), but you can finely dice or mince it until it really is just a flavoring if the texture bothers you. Do you have any veggies you like?

      Yeah I bake some chicken and lay it on a bed of mixed green salad with some red wine vinegar. I also have green beans sometimes just to try to get in the vegetable carbs. The problem is that I was raised pretty much as a carnivore for most of my life and I find that a ton of veggies make me wanna lose my dinner. My dad was a meat 'n potatos man, and since potatos are no longer an option, i am stuck with meat lol. I do enjoy a good plate of stir fried veggies.

        i think it is more of a texture thing than anything. i will try mincing the fresh veggies i do like and incorporating them. i know i like bell peppers, jalapenos, lettuce, cabbage, green beans, squash and eggplants. Anything else I either have not tried or cannot stand.

            mashed cauliflower

            I made this, and one of my sons said you can hardly tell its not mashed potatoes. I added sour cream to them, i see some recipes add cream cheese. Try this, you may just like it. HTH, lj

              If you like eggs and cheese, here is a crustless quiche recipe that uses a pound of veggies and serves 4:

              KANSAS QUICHE

              4 eggs
              1 and 1/2 c grated cheese (cheddar or swiss)
              1/2 c milk (I use unsweetened soy, or you could use Hood's Carb Countdown or even diluted half and half to keep the carb count low)
              1/2 teaspoon salt
              1/4 teaspoon pepper
              1/2 teaspoon dried basil
              1/4 teaspoon dried oregano
              1 pound veggies (greens like kale or collard greens, or sliced zucchini and summer squash are good)
              half an onion, chopped

              Oil an 8x8 pyrex dish or casserole.

              Preheat oven to 375.

              Steam the veggies and onion until tender. Cool slightly. (If you have leftover cooked veggies, great! Just skip this step.)

              In a medium mixing bowl, beat the eggs well, then stir in the milk, cheese, and seasonings. Stir in the steamed veggies and pour the mixture into the pyrex dish.

              Cover and bake for 30-40 minutes. (I usually uncover for the last 5-10 minutes, so it browns nicely on top.)

              This makes a great brunch or a light supper with nitrate-free bacon (mmmm, bacon). And if you have vegetarians in the house, they'll like this.

                :wave You do have a tuff problem. My problem is I love all food even the ones I'l allergic too! LOL. I have found some great veggie recipes in the Atkins and low cars recipes web sites. Also I love to cook. Tonight, I making Parmesan eggplant, but I'm putting a new twist to it. This time I'm going to bake it and top it with Mozzarella cheese. If it turns out, I'll pass the recipe on. ( LOL. Hubby will be my taste tester. ) You just have to keep trying new veggies and different ways to fix them. When I got married, my husband wouldn't touch spinach or asparagus. Now he loves them because I kept making it. It all a matter of getting used to eating something new. Hang in there and soon you will become a rabbit too.

                  I too have a tough time with veggies I do try so hard to get them in but some days I fall short. nobody is perfect... :hug

                    I used to really not enjoy salad, but now I just have my 2 cups everyday for lunch and thats that. You know I really like it now.

                    2 cups salad for lunch 1 cup hot veggies for dinner. I use a steamer and buy fresh veggies. I find that routine works best for me.

                      yeah i think this is going to be -my- problem. it seems everyone has one, whether it is exercise, water, cravings, etc. well thank you all for the suggestions. i have a few ideas now to work with so it may turn out to be easier than i thought.
