  • Favorite meals

    What are some of your favorite throw together meals? I figured this would be especially helpful for those of us constantly on the run.


    One of my favorites is cauliflower, either ham or sausage and black olives all cooked together with cheese. It's a mish-mash meal, but it's a quick fix and if I make enough, it can last for 3 or more meals.

    For the munchies

    butter, cinnamon and splenda melted in the microwave and then tossed over pork rinds. It's absolutely delicious!


    A good "carry" meal is cooked sausage, cubed cheese and s/f sweet pickles. It covers all the bases and is incredibly satisfying on the run....not to mention easy to munch while driving! LOL

    I love homemade Guacamole (really made from scratch), it tastes good with Chicken or Beef.

    I also like Argula (or Spinach) and Cream Cheese stuffed Chicken Breasts.

      I was going through Linda's site this afternoon and decided to try another one of her recipes. Oh My Word!!!! Love it!

        Mine is seriously lasagna made with cauliflower dough. I love noodles, and these perform beautifully! My kids actually like it as much as regular lasagna, too. I usually will make half up with pizza toppings and then leave half plain for the folks who like their lasagnas unfettered.

          Oh wow that lasagne looks delicious! I moved to OWL 1 - lookforward to trying that.

            It's really worth the effort! You could also make lasagna without the noodles, too.

              I'm big into making stir fries with fresh veggies and some protein. It is my "mix and match" meal. Some chicken, pork, turkey, scallops, shrimp or beef with some acceptable veggies. I'm not longer on the early Atkins stages, so I use a little soy sauce, sesame oil, rice wine vinegar and splenda. I cook the minced ginger and red pepper with the meat and veggies to flavor it. I even have a wok for the grill. I usually make extra so I can have leftovers the next day. It has been my "go to meal" for years.
