    HI everyone,
    I just need to write down what I am feeling.........
    I am struggling with not haveing enough lc food in the house.We are on a tight budget and have 4 kids too.So,I can only afford so much.
    Right now I am down to a few eggs,some lc bread,green beans,other lc veggies,2 cans of tuna,I do have some fish in the freezer and some chicken,......... Oh, I have plenty of high carb food,noodles,rice ect...well you might say that sounds like pleanty,but I have 6 folks to feed and I fix the same meal for every one and I just eat what is lc.Don't have $$ to fix a whole diff.meal just for me.
    My hubby doesn't do lc so I can't just replace the hc foods w/lc ones.
    I try to find a happy balance with the food buying but I guess I need to be alittle more creative.
    Any way That is some thing that is hard for me right now.
    I love this wol and fel great on it not going to quit just it i s hard $$$ wise at times.Does any one else have this problem?

      Hi Fluffy,

      There is such a big market out there of easy-to-prepare, ready-made, instant foods... but mostly flour-based! (and high in sugars)

      Sometimes with Atkins I find it difficult, because when I'm tired or need something quick, there are very few foods that I can prepare quickly and make a meal of it. Sometimes I just wish there were more Atkins instant meals - but hey, that's the whole point of Atkins isn't it? To spend more money and time, to eat more nutritional wholesome foods instead of the over-processed instant foods.

        I think carbs in general are cheaper to buy than most other foods. For instance, pasta, breads, noodles are fairly cheap and go a long way when feeding a big family such as yours. I think there are still ways around cooking as you have to cook for a big family. For instance, if you are cooking lasagna or spaghetti, just put some of the meat sauce aside and melt some cheese over top of it to make it a meal for yourself, and feel the rest of the family more noodles than meatsauce, and I'm sure there will be enough to go around... just a thought!!

          :hug I know how you are feeling but you can do this with a family that is not. I buy in bulk and portion the food out. When I make them a high carb meal like spagetti I seperate the meat before I add make the sauce and make a salad out of it for me. When I fry chicken I do mine naked and first,I don't mind it being cool. If it is something I can not eat any of I make egg or tuna salad. Tuna and eggs is cheap enough. I hope you can work this out.             I know the feeling.....You are going to have to load up on cheap stuff. tuna fish, Eggs,cheese and lettuce and cucumbers for salads.

              Nothing really new to add

              When I am low on money, I make sure I have mayo and cans of tuna, cucumbers, red peppers, and eggs around. You can (and I have!!) gone for a week or so making tuna and salad for lunch and/or breakfast and omelettes with caned salmon and cream cheese for dinner. I sometimes make out a menu and have the thigs on hand I need for vegetable and chicken omeltees at night and stick with the tuna and other canned stuff during the day with veggies and dip.

              I know it could get boring, but it helps to keep you on track. When you can, buy bulk of frozen vegtables or meat. I get the 5 lb. frozen vegetabes at Price CLub and tuna when it is on sale. I loved tuna since I can remember, so it is easy for me. Also, water is free if you go from tap, so there's soemthing you don't have to worry about.

              For family dinners, yoiu can make vegetables be the main thing, like salads or a veggie dish, tehn add in proteins like meat and chicken or fish. Add the pasta or rice in smaller amounts and you can eat everything but.

              Not to belabor the tuna point....I have about 40 cans on teh shelp cause whenever I see it cheap I buy it. Sometimes it is 19 cents a can on sale so I go back a few times and buy the limit!

                  I understand exactly how you feel. It is hard to buy lc foods as well as all the other hc foods. It gets pretty expensive.

                  I think if you can just stick with the basics of the lc program and not buy alot of expensive foods you will do fine - eggs, chicken, tuna, cheese, veggies -

                  The most important thing about Atkins is having the right foods available. Try to search for sales each week and make a shopping list and only buy whats on the list.

                    I am doing ok ,I just get concerned when I think I won't have enough to get me by the lc way.
                    I love all the ideas thanks!!!!
                    I don't spend money on the lc bread ect..my mom bought a loaf for me.It is ok,but for almost $3 no thank you!!!!I can buy quite a bit of tuna for that!!! :nod
                    I am easy to please and have simple taste-thank The Good Lord!!!

                          I totally understand about the cost of things.

                          Tuna is a good alternative, and many times you can find it on sale.

                          Chicken cutlets are cheaper than steak, and you really don't need the steak.

                          I am also a big egg fan....and they are not too badly priced either.

                          I think the veggies are often more expensive than the meat!
