  • quick question about creme fraiche

    They do not appear to have the lovely creme fraiche in the US - anyone know: is it ok for induction - I have one that was 3.9g carb per 100g (and was low-fat too) and have been using it in cooking as I prefer the taste to out and out cream. Is this wrong?

      You might find that a fullfat creme fraiche would have less carbs too!

      I always counted it as being the same as sour cream, and so used it in the 'special category' quantities suggested
      Special Category Foods
      To add variety, each day you can also eat 10 to 20 olives, half a small avocado, an ounce of sour cream or three ounces of unsweetened heavy cream, as well as two to three tablespoons of lemon juice or lime juice. But be aware that these foods occasionally slow down weight loss in some people, and may need to be avoided in the first two weeks. If you seem to be losing slowly, moderate your intake of these foods
      So an ounce of your creme fraiche would amount to less than one carb I imagine.

        I have a recipe if you're interested.

        1 pint heavy cream
        3 tablespoons cultured buttermilk
        1. In a medium bowl, whisk together the cream and buttermilk.
        2. Cover the bowl with a towel and let stand in a warm place until thickened, about 12 hours.
        3. When thickened, cover bowl tightly and refrigerate until well chilled, 2 to 3 hours.
        4. The Creme Fraiche can be refrgerated, tightly covered for up to 2 weeks.
        Calculated for 1 cups (313g)
