They do not appear to have the lovely creme fraiche in the US - anyone know: is it ok for induction - I have one that was 3.9g carb per 100g (and was low-fat too) and have been using it in cooking as I prefer the taste to out and out cream. Is this wrong?

You might find that a fullfat creme fraiche would have less carbs too!
I always counted it as being the same as sour cream, and so used it in the 'special category' quantities suggested
So an ounce of your creme fraiche would amount to less than one carb I imagine.Special Category Foods

I have a recipe if you're interested.
1 pint heavy cream
3 tablespoons cultured buttermilk- In a medium bowl, whisk together the cream and buttermilk.
- Cover the bowl with a towel and let stand in a warm place until thickened, about 12 hours.
- When thickened, cover bowl tightly and refrigerate until well chilled, 2 to 3 hours.
- The Creme Fraiche can be refrgerated, tightly covered for up to 2 weeks.
Recipe makes 2 cups
