For me, I like to make stuffed boneless pork chops. We buy the meat from Sams Club about 1" thick. I cut a pouch into the pork. In a bowl I mix salsa and cheddar cheese. Stuff pork chops with salsa and cheese mixture. I then dip them in egg and then in the kraft canned parmesan cheese. Bake at 350 degrees until done (about 35 minutes in my oven). I'm thinking of grinding up some pork rinds and mixing in seasonings and parmesan cheese for the breading next time to see how that works out.

Ok, I don't know if you have tried this, but it is absolutely wonderful and has a taste reminiscent of popcorn. You can store it in tupperware or zip lock - excellent to take to the movies or camping, etc.
DEEP FRIED KALE
Buy two bunches of Kale. Slice off the stems so you just have the curly leaves.
Heat up a pot of oil. Set out a cookie sheet with 2 layers of paper towel. Get out your salt shaker. Get out a slotted spoon or tongs.
Now, here's the part that requires some brains and quick hands!!!!!
Drop the kale into the hot oil. Within a few SECONDS, it will turn golden brown. IMMEDIATELY remove it from the oil and drop it on the cookie sheet. IMMEDIATELY sprinkle with salt.
It ends up very crunchy and satisfies the potato chip/popcorn urge like NOTHING else!Started Atkins 2d time 6/20/05

It's really good but you can adjust the recipe to fit your taste. I've made it once and I've been eating a slice for breakfast every morning since I'm SICK of eggs (don't mind them in cheesecake though).Erica

I don't know what to call this. But I eat it for breakfast almost every day.
1 HUGE container of sour cream
8 eggs
1 tablespoon butter, melted
1 tablespoon vanilla
Sweetener to taste
Flavored syrup if you want (I like raspberry)
Mix it all up. Grease a 9x11 pan. Pour it in. stick it in the oven until firm and lightly browned on top.

Crustless quiche:
4 eggs, beaten
1 cup shredded cheese (I prefer cheddar)
1 small can sliced water chestnuts
5 tablespoons chopped red onion
Salt and pepper to taste
Greese a round cake pan. Mix all ingredients and pour in. Bake at 375 until firm and golden brown. Serve hot or cold. Excellent with a salad on the side.
To vary the recipe, try these instead of or in addition to the water chestnuts:
1. Canned green chiles, chopped
2. Bacon (except for us kosher folk!) and swiss cheese instead of cheddar
3. Olives
4. Bamboo shoots
5. Chopped broccoli

Don't worry Debbie, my recipe was not an "original" either. I just switched around a recipe that used breading, which I used to make (read in a magazine).
Another thing that I really love is the Jalepeno Poppers on Linda's recipe page that Debbie linked. Yummy.........

I'm an easy recipe person too. Its all about convenience. We have enough to do :yes .
Another one on Linda's that I like is the Stuffed Green Pepper recipe. The only issue I had was that they seemed dry to me (I cooked them to have for lunch the following day), so after cooking I added salsa to them. That was really yummy. Next time I think I won't add chopped tomato and just add the salsa.
