  • OMG flax seed cracker

    I had the urge to eat a quesadilla for lunch, knew I couldn't, so I decided to try making a flax seed cracker and melting cheddar cheese on it.

    Oh. My. GOD!!!!!!!!!!!!!!!!!!!

    While it was microwaving, I was thinking "that is SUCH a small cracker, I won't want just one, but more than 2 tbsp of flax will make me SICK!" So I continued to make my spinach salad, then popped the cracker out, melted cheese on it, and dug in. Can I say it was filling AND delicious? And I only wanted one. It was fine.

    This is going to become a staple. I can't believe I never tried it last time around......

    Okay, is the flax seed cracker something you bought premade or did you make it yourself? If so, how?

      Made it myself, using a recipe I found on the board. It's EXTREMELY COMPLICATED (NOT):

      Put 2 tablespoons flax seed in a bowl.
      Add a dash of salt
      Add 2 tablespoons of water.
      Mix
      Let it sit for 5 minutes.
      Spread it on a plate or piece of parchment paper.
      Nuke for 2 minutes.

      It gets hard and sorta crispy. I melted cheese on it right away, so I don't know if it gets really crackery-crispy after it cools off or not, but I assume it does.

        Oooooooooo I will hafta try that! I hope it gets crispy. Sometimes I need something crispy for a low carb dip, and cucumbers or pork rinds just don't get it, ya know?

          you can spead it in smaller chips so you think you have more and you can sprinkle herbs and seasoning on it to flavor your fiber too. :nod Just watch then close as they quickly go from damp to crunchie to burned if you don't.
          Not2late invented those yummy induction legal crunchie chips.

              They are great, aren't they. but I always used GROUND flax, not just the whole seeds to make them.
              Wondering how to get 'most' of your net carbs from your induction veggies?

                I've never even SEEN the seeds. I buy it ground at walgreens.

                      and we looooove her for it! They are soooooo good, be careful though, if you eat too many, you could end up on the pot all day, or the alternative can also happen, you create a er..plug and can't go. NOT very pretty to go through. I usually take one cracker and make it into 4, I add herbs like oregano too, delish! Parchment paper works great in the nuker.

                          I sometimes make a sweet variation, using a little Splenda and vanilla or almond flavoring. I then take a small amount of cream cheese, add a bit of Splenda and flavoring to it, as well, and spread on the top. Makes a great "icebox" cookie!

                              I made these tonight, first with italian seasonings, and then with cinnamon & splenda. They were different but good, my daughter liked the cinnamon ones the best.
