How about stuffed mushrooms? You can mix cream cheese,parmesan, onion, even some black olives up and stuff the shrooms...Started Atkins 2d time 6/20/05

DH also dislikes many vegetables including squash, but will eat salads so I never really worried. One thing I started doing for myself, though, that he's happily eating is cooking asian veggie. My favorite is baby bok choi (pak choi) or shanghai bok choi. See pictures and other names for them here.
I buy little bunches not much longer than my hand, clean them and slice them in half longwise then throw them in a hot frypan where I've started a little garlic and ginger in some oil. Slap a lid on, toss after two or three minutes, a few drops of tamari/soy or just some salt and you're done. I figure the carb count as for regular bok choi which is 0.8 net per cup plus a little for the garlic and ginger!
We've also been cutting a tomato in half, sprinkling with oregano then covering the cut side with grated parmesan and broiling for a few minutes until the cheese starts to go golden brown. Kinda pizza-y.
