  • Cold supper ideas?

    It is so hot, hot, hot here that I just can't bear the thought of eating hot food. In my pre-atkins days, I would have made some kind of chicken & pasta salad to keep in the fridge for supper. Or if it was just for me, I'd eat some tuna and cucumbers. But I'm planning meals for a family of four--including myself, two children and my meat-and-potatoes husband. Any suggestions?

    I also liked to keep a macaroni salad in the fridge during the dog days of summer but like this salad and cold grilled chicken goes well with it. Or a burger from the grill if you feel like grilling out instead of heating up your kitchen.

    Here is a nice summer time recipe if you like Broccoli/Cauliflower salads. I got this on another board I think and liked it.

    Broccoli Cauliflower Salad
    8 (3/4 cup serving)
    Ingredients:
    1 bunch broccoli
    1 head cauliflower
    1/2 cup granular Splenda (...... to taste.... 1.3 cup was fine for me)
    2 Tablespoons white vinegar
    1 cup mayonnaise
    1 cup shredded Cheddar or Marble Jack cheese (more if desired)
    Induction Legal variation - 8 slices of bacon, cooked crispy & crumbled.

    OWL variation - Instead of bacon, 1/4 cup (1oz) roasted/salted sunflower seeds


    How to prepare:

    Cut Broccoli and Cauliflower up into bite size pieces.
    Stir together splenda, vinegar and mayo.
    Pour over the broccoli and cauliflower.
    Toss in cheese and crumbled bacon (or sunflower seeds)
    Toss all together to mix together.
    Refrigerate until ready to serve.

      This week I made a lot of tuna. Mine had large hunks of boiled egg, made it seem like pasta. Theirs had pasta. I used mayo, eggs, olives,onions,celery, seasoned salt, celery seed and pepper.

        I also steamed some shrimp last night and will have that cold with some homemade cocktail sauce for either lunch or dinner today. Tuna is always in my cupboard ready to mix and throw on a tossed salad. Another cold meal is a caesar salad, one of my favorites.

          When it's summertime here, my family loves it when I lay out a "buffet" of:

          Devilled eggs (they can eat dozens!)
          tuna
          olives, chilled
          guacamole
          turkey rollups (I use lettuce on mine, they get tortillas)
          gazpacho, which is a nice cold soup
          buffalo wings
          Started Atkins 2d time 6/20/05
