  • FOURTH OF JULY WEEKEND

    I was just thinking that the upcoming holiday weekend may pose some temptations for us. I don't know about you, but the second I see watermelon and smell hot corn on the cob, I start to drool.

    Let's start a list of things we can do to ensure that we stay clean. And also some fun festive dishes we can prepare and either bring with us if we go somewhere, or have at home.

    Well, I know I've posted about the mock potato salad before, but it was great, so I would suggest that for the weekend. I took frozen cauliflower and steamed in the microwave, added boiled egg, small amount of onion, fresh bacon, salt & Pepper to taste, mayo and mustard. It was sooooo yummy.

    Also, I saw a recipe that I would like to convert to a low carb recipe, but have not attempted it yet (it is made on a graham cracker pie crust, so need an alternative, but could probably just make it without.) But, you mix cream cheese and whipped cream, and then add strawberries and blueberries to look like the U.S. Flag. It was really cute. So basically, a cheesecake.

      I may blow it but I'll really try not to. I'm going out of town, almost by myself. I'll either not eat enough or I'll get too hungry and eat everything. I'll really try to control myself this time. My hubby and daughter might join me Sunday & Monday, but it's mostly my little time away for fun :nod

        I plan on grilling out, which makes it totally easy to have MEAT....topped with CHEESE! My sister makes these awesome baked water chestnuts wrapped in bacon - so hopefully she'll be bringing those.

          my husband and i are all about grilling. we live to grill. NO JOKE! so i will stick with the meats and veggies (what's allowed of course) and by no means will i cheat. i live by the motto - if you really want to do it, you will. i want to do this and i know like the book says "this one little taste will hurt!"

            instead of graham cracker crust, mix flax seed with butter and it's just great.

            Can you post directions for making the water chestnuts wrapped in bacon?

              I was going to ask the same thing! That sounds fabulous...

              Finelly - really, flax seed and butter? How much? Does it really satisfy that graham cracker feeling?

                I dont know how much, actually. I can't remember! Start with 1/2 cup, I would think. Yes, it really does give you that graham cracker crust feeling!

                    Is flax seed available only at a natural food store? And is it expensive?

                      I get my flax seed meal at Walgreens. I've also seen it at Walmart.

                      It's not expensive. I eat it every day - usually about 3 tablespoons - and it keeps me regular,makes my hair and skin look great, and has as much fiber as it does carbs!

                        i have always heard people talk about flax seed on here, but i have never tried it. now that i know you can get it from walgreens, i will definitely pick some up.

                          Magenta - it's easy to use! You can make it into a cereal, you can make crackers and cookies and muffins with it....I just discovered how to make a cracker with it and I put melted cheddar on it and it satisfies my melted cheese on saltines craving.....

                            OMG, cheese and crackers. *drools simpson style* well i am going to get some when i get paid friday. see i wasn't so much a junk food eater. i am more of a chip, cracker, bread eater. this is an awesome discovery.

                              I guess I have it the easiest for this holiday. We have no plans. Hubby will be working this July 4th, as will both of my children. So its going to be just another day for us. Will have burgers with hubby for dinner and I think I will make up a mock potato salad with cauliflower to go with it.

                              Hope to at least see some fireworks that night.

                              Watermelon makes my mouth drool too. I do get to a point where I really miss my fruits but have learned from past mistakes that they also set me off. The only time I will touch them is if I am at a work related buffet unprepared and will pick and choose as best I can and sometimes that includes the fruit platter.
