  • Snack ideas

    Sarah mentioned that she needs to think up some new ones, as she's getting sick of hard-boiled eggs. How about we all list some snacks we like to take with us to work or have around at home?

    Mine are:

    1. I keep black olives in zip lock baggies - about 12-15 per baggie.

    2. I mix a block of cream cheese with a jar of artichoke hearts, blend thoroughly, form into tiny balls, and freeze. Then I keep them in tupperware containers (2 balls per) and have them as a snack.

    3. roasted chicken drumsticks (in baggies of 2 per)

    4. a small baggie of raw brocolli and a tiny tupperware container of ranch dressing

    5. 1/2 serving of my "sour cream thingy". Can be frozen and then thawed out at work....

    A variation of the hard boiled egg...the deviled egg...YUM!

    Lunch meat rolled up with cream cheese

    Sliced cucumbers and dip or cream cheese spread on them

    String cheese

    Pepperoni plain, or microwaved to make chips (melted cheese optional)

      Finelly-

      They sound great! OK, dumb question but I have to ask. Do you unthaw your cream cheese and artichokes befor eating LOL? What is a "sour cream thingy?"

        I freeze the cream cheese balls and take them with me to work, so they sort of thaw there. You can eat them frozen or just chilled......

        My sour cream thingy is: 10 eggs, 1 enormous thing of sour cream, 2 tspn vanilla, splenda to taste. Mix up, bake at 380 in a 9x11 pan until firm and golden brown on top. Chill.

        You can vary it by adding cheddar cheese and green chiles instead of vanilla and splenda, or cheese and water chestnuts, sliced.

        Somewhere I posted the nutritional values. I'll find it again and post it later.

        I like it for breakfast because I can just serve it up (8 servings per pan) and eat. I'm never hungry in the morning and this is easy to eat.

          1. Fried pepperoni - either in the microwave, oven, or pan
          2. Cheese cracker - fry cheese in a pan sprayed with PAM
          3. Artichoke and cream cheese dip baked in the oven
          4. Pickles (not many, but I love them!)
          5. Lunch meat and swiss cheese rolled up
          6. Tuna rolled in lettuce
          7. Pepperoni and cheese
          8. Taco dip - cream cheese, sour cream, and taco seasoning blended. I take some of this to work in a tupperware container and dip pork rinds in it. Sometimes i add some shredded cheddar.
          9. Cinnimon crisps - pork rinds with melted butter on them then coated with splenda and cinnamon.
          10. Olives
          11. Deviled eggs
          12. Crab dip - Crab meat, mayo, and cream cheese heated together in a pan. Regrigerated. I take some in a small dish and dip pork rinds in them or top lettuce with it.
          13. Stuffed mushrooms - cook sausage and add it to some cream cheese. Blend well then stuff mushroom and eat hot or refrigerate. I regrigerate my sausage and cream cheese, take to work and reheat, then stuff.

            I wish that someone would invent something like pork rinds that isn't made of pork. Keeping kosher means there's nothing I can use for breading or to crunch on like that.......

              I found a product by "4C" for breading that I use once in awhile for breading fish for frying. I dont use it on induction but it was a good substitute so that I could have fish some other way than baked all the time.

              Its called carb careful crumbs and comes in plain or italian seasoned. It is with the bread crumb section at my local grocery store. 4 net carbs per 1/3 cup serving. It is a soy product for those who stay away from soy.

                Yummmmm! What great ideas!! Thanks for starting this thread Finelly!!!

                I would add some snack ideas, but honestly, I have no snack ideas The only occasional "snack" food that I have is the cream cheese with splenda on it and this week I added half a scoop of the Atkins dry shake mix to pep it up a little. I don't have this very often though.

                Okay, I need to get all of these ideas down somewhere!!!!!

                Kathi, I love that taco dip idea and the cinnamon pork rinds idea. I had never though of making something sweet out of those.

                  I love cinnamon pork crunch cereal

                  pork rinds, 1 cup of half cream and half water, splenda and cinnamon. Its soooooo good! I have it whenever I am craving cereal.

                  Hey Finelly, forgive my kosher ignorance here, but what about coating with almond flour?
