  • I'm BA-AAAACK! / Breakfast ideas!

    Thank you all for trying to get my a$$ in gear! I don't know how i did it the first time around without you!

    We just got enough of Dennis yesterday to annoy us, nothing dangerous (that's why I could'nt come out to play. Is there any tuna left for me?). I was gonna make a quiche last night for breakfast this morning but our power kept going out! I'm trying to think of things to eat for breakfast that I can look forward to. I made cheesecake a few times the last couple of weeks and it was really good, but I think it stalled me a little. The last time I made it I used less cream cheese and an extra egg, some cinnamon and nutmeg and it actually tasted a little bit like french toast. I'm going to try to make this pumpkin custard and see if that's something I can handle in the morning.

    What you all have for breakfast in the morning during induction?

      Hi elfish! I eat bacon and scrambled eggs with cheese, pork roll and cheese, sausage omelette, and that is about it LOL

        Welcome back Erica, we missed you!!!!!! Glad Dennis didn't do to much damage for you.

        For induction, I was eating either a hamburger w/cheese and some mayo, egg/tuna salad over lettuce, boiled eggs. On weekends I would go a little further with fried/scrambled eggs, sausage or bacon. But I never seem to have enough time in the morning. I will also eat leftovers of whatever meat we had for dinner as my breakfast, usually with or over a salad.

          Thank you Sarah! I missed you guys too! I'm sorry you're not feeling well. My son was pretty sick this weekend too. I hope you feel better!

          I just got TOTALLY burned out on scrambled/fried eggs and omlettes from the first time I lost alot of weight. Then when I got pregnant with my last baby I couldn't LOOk at a egg without getting sick! That's never really gone away. I can handle them in stuff but not if it's too eggy.

          I guess I could eat last nights' leftovers. I've never really been a meat-in-the-morning person but it would be better than straight eggs.

            Thanks for the well wishes Erica. I'm the same as you about breakfast. After the first time, I can still hardly tolerate egg. Basically, I'm forcing myself when I do eat them. That is why I have focused more on eating last night's leftovers.

              quiche, definitely.
              I also eat bacon with cheddar cheese melted on it. Just make the bacon on sunday or something, and then reheat in the microwave wth a piece of cheddar on it. Yummy, and so decadent.

              what else do I eat?

              Sometimes I mix 2 eggs with a hunk of cream cheese and stick it in the microwave, and then put things in it... Hot sauce, celery, ham, etc... kinda weird, but it comes out so fluffy that it's not really too eggy.

              I havne't gone the leftover route for breakfast, but I probably will I imagine.

                I've been thinking of making some stuffed mushrooms for breakfast. Might be convenient to carry w/me to work. Maybe you would like that.

                  Boy, breakfast is a toughie for me, too. I really can't deal with scrambled eggs, etc. And we keep kosher, so no bacon. And leftovers make me sick.

                  So I pretty much always have my sour cream thingy for breakfast. Or the pumpkin thingy.

                    I also got really REALLY sick of eggs before and am just now beginning to eat them once in ahile again. I have a really good recipe for a breakfast item that

                      Phew,

                      Ya know sometimes that just gets you so fast! LOL I am seriously thinking of buying stock in Charmin or some other TP company.

                      Any how, here is a recipe that I got online someplace, I cant remember where but it is simple and freezes really well. I make a pan and wrap up servings to put in the freezer. Its really good to take to work if you have access to a microwave oven.

                      Breakfast Squares

                      12 eggs
                      1 cup grated cheese (I like sharp cheddar)
                      1/2 cup chopped onions
                      1/2 cup chopped green peppers
                      1 cup diced bacon (or sausage, ham or what ever you like)
                      1/2 cup chopped mushrooms
                      Sautee meat and veggies in butter. Beat eggs and add veggies, cheese and meat. Put in 9" x 13" pan (sprayed with Pam). Bake 350 for 30 minutes. You can adjust this recipe to use any veggies that you like. I have made it with chopped spinach but usually use what ever I have on hand at the time.

                        I feel like my posts always get ignored, I am not on as much as everyone because I have a high demanding job with little time I am usually not this sensitive, but it seems as though I post and post and nothing comes back in response.
