Good Morning, Second-Timers! I'm trying to get motivated so I thought I would post my menu for the day. Give me something to look forward to!
This morning if I have time I'll be making a pumpkin custard to have for breakfast later this week. I've been saying forever that I'm going to make it but I couldn't find canned pumkin anywhere! You'd think it would'nt be hard to find.... I've been looking for liquid splenda too since it's supposed to have less carbs. After going to 5 stores I finally found SF DaVinci vanilla syrup, which I think will work ok as a substitute.
Here's my menu:
Breakfast: Decaf Coffee with SF vanilla syrup and LOTS of cream and a couple of peices of bacon
Lunch: Fajita chicken with onions, peppers and lots of cheese
Dinner: Italian cassarole. I made it again last week but changed the recipe a little. I liked it alot better and I've been craving it since!
Funny story: The italian cassarole recipe calls for mayo in the topping. Now, I like mayo but that sounded a little yuck to me but I thought I'd try it anyway. Well, my hubby HATES mayo. Makes him sick to look at it. He'll have a tiny bit on a sandwich but he can't see me put it on there. Warm mayo REALLY makes him sick (tee hee). Ok, so I made the cassarole and put mayo in the topping without telling him (theory being what he doesn't know won't make him sick). He ate the cassarole and liked it ok (it's pretty heavy). An hour later he says "Was there mayonnaise in that?" <Erica sheepish> "Why do you ask?" Anyway, he didn't taste it until an hour later and was sick for the rest of the night!
Ok, done rambling. It's really quiet here 'cause everyone's still asleep. I would love to make some coffee right now but the grinder will wake everyone up... alas. HAve a great day everybody!

I'm not much of a sea food peson. But the steak sounds yummy.


The mayo made it almost too heavy. It's good enough with just the sour cream and cheese in the topping.You might just add more cheese to make up for the missing mayo
