    Good Morning, Second-Timers! I'm trying to get motivated so I thought I would post my menu for the day. Give me something to look forward to!

    This morning if I have time I'll be making a pumpkin custard to have for breakfast later this week. I've been saying forever that I'm going to make it but I couldn't find canned pumkin anywhere! You'd think it would'nt be hard to find.... I've been looking for liquid splenda too since it's supposed to have less carbs. After going to 5 stores I finally found SF DaVinci vanilla syrup, which I think will work ok as a substitute.

    Here's my menu:

    Breakfast: Decaf Coffee with SF vanilla syrup and LOTS of cream and a couple of peices of bacon

    Lunch: Fajita chicken with onions, peppers and lots of cheese

    Dinner: Italian cassarole. I made it again last week but changed the recipe a little. I liked it alot better and I've been craving it since!

    Funny story: The italian cassarole recipe calls for mayo in the topping. Now, I like mayo but that sounded a little yuck to me but I thought I'd try it anyway. Well, my hubby HATES mayo. Makes him sick to look at it. He'll have a tiny bit on a sandwich but he can't see me put it on there. Warm mayo REALLY makes him sick (tee hee). Ok, so I made the cassarole and put mayo in the topping without telling him (theory being what he doesn't know won't make him sick). He ate the cassarole and liked it ok (it's pretty heavy). An hour later he says "Was there mayonnaise in that?" <Erica sheepish> "Why do you ask?" Anyway, he didn't taste it until an hour later and was sick for the rest of the night!

    Ok, done rambling. It's really quiet here 'cause everyone's still asleep. I would love to make some coffee right now but the grinder will wake everyone up... alas. HAve a great day everybody!

    Good morning Elfish

    Menu looks good. Is that enough for breakfast? Dont want you to get hungry.

    That italian casserole..............wanna share? Its nice to have something different once in awhile.

    I cant find sf davinci anywhere so am going to have to order on line. I use it for flax muffins and have been wanting to make them again.

    My coffee is just now done...... Time to get a cup........

      Breakfast and lunch are only a few hours apart for us so i can usually make it till lunch. I'm not a big breakfast eater anyway. Tomorrow, though, i am going to have a peice of my pumkin custard that I WILL make today

            Nice menu! Can you share the italian casserole??? I only had bacon for breajfast this AM< running late! I forgot my tuna can at home, so I guess I will have a taco salad with no sheel from taco bell..boohoo, I was really wanitng my tuna! For dinner I will have steak, cajun cat fish, and a small salad!

              Sounds yummy Erica! I'm interested in the Italian Casserole too!!

              Well, for breakfast I will admit that I had an evil Atkins breakfast bar (running late, was tempted to hit McDonalds). For lunch, I have chicken breast and salad w/cheese. For dinner, pork with tomoto and cucumber salad w/carb free italian dressing. Not sure about snacks yet. Did not come to work prepared - shame on me.

              Kathi, cat fish scares me. LOL I'm not much of a sea food peson. But the steak sounds yummy.

                I made a couple of changes to it.
                1. I left out the mayo The mayo made it almost too heavy. It's good enough with just the sour cream and cheese in the topping.You might just add more cheese to make up for the missing mayo
                2. I let the meat cook on low in 16oz. tomato sauce (covered) for about 45 min so it would tenderize and the sauce would soak in really good. Then I drained off the extra sauce. There really shouldn't be much sauce left.
                3. Be sure to bake it until it browns on top. The browned cheese is really yummy and gives it alot more flavor.

                  Erica, I'm sure hubby was happy that you left out the mayo! That was too funny He better never mess w/you! You know how to get even. LOL

                        Ok, so I'll be honest. The pumkin thingies aren't very good. They turned out not sweet enough for my taste and a little spongy. Maybe because I used vanilla syrup instead of Splenda. I wasn't sure of the amout I should use.

                        I think I will try again and add some cream cheese and use granular splenda instead.

                        I was really looking forward to them too!

                          If you go to Da Vinci's website they have this list of stores that carry their products. Most Super-Walmarts have a few sugar free flavors...but not all..and not all the time.

                            Thanks ssgswife, our 2 superwalmart's had spaces for the SF davinci but none in stock. What's funny is of all those stores listed, we only have the Super Walmart That's what I get for living in po-dunk Georgia I actually found some at Winn-Dixie (I think they're only in the south-east). Still would like to find liquid Splenda. I may have to order that online.

                              Thanks for sharing Erica! Let me know if your modified version turns out any better. Doesn't sound like I would enjoy it. I tried to like the mock danish too, but that didn't do the trick for me either.
