  • My mom always told me to eat my veggies;)

    Take away my bread, pasta, and potatoes... BUT I cannot give up my veggies! I bet I eat 5-6 cups a day.I eat tons of squash, lettuce, zuchinni, eggplant, spinach, here lately vidalia onions( are those ok?), and many more- However- all the veggies I eat are on the induction list... What does everyone think about this?

    While back I posted in the Main Atkins forum that I had heard that the Atkins researchers are now recommending that we eat 20 grams or under of carbs and not restrict it to the 2-3 cups. Nobody who responded had ever heard of this nor were they particularly willing to consider it at the time. But it has stuck with me.....

    I would assume that as long as you eat under 20 grams of carbs per day, you could eat as many veggies as you wanted. I occasionally will have a fourth serving of veggie, for example if i want to have some pumpkin souffle for dessert, or if I just have that hankering for some mashed turnips even though I've had my zuchini and spinach. It sure hasn't hurt me!

    And if Brook does it.....well, look at HER!!!!!!

        No for induction according to DANDR we eat 2-3 cups off the '2-3 cup' list and one cup of the '1-cup' list IF we only have two cups from teh '2-3 cup' list.
        So on induction 3 cups in total of veggies.
        The up to 20 carbs also includes your cheese, salad dressings, cream, meats and eggs don't forget!!
        As the first rung of OWL is veggies you wont have to wait too long to start increasing your servings and you can add as many servings of veggies as you like (5 carbs extra per 2 weeks) if you want to stay on the veg rung for longer.

          Yep. It's a *total* of 20 grams of carb, including cheese, eggs, cream, etc etc, and you can still do that with more than 3 cups of veggies and stay within induction total range. Like I said in a previous post, that came from the Atkins Center itself back in the day when Dr. Atkins still ran the joint saying that the 2-3 cup rule was a general guideline made for simplicity sake. But Elizellen is correct -DANDR does say 2-3 cups.

          For example, I'd be hard pressed to logically argue eating 2 cups of jicama (23 carbs-10 fiber=13 net carbs) and 1 cup of say spaghetti squash (7 carbs), which totally falls within the 2-3 cup induction guideline (total of 20 net grams in veggies alone) against say 3 cups of romaine (3 carbs-3 fiber=0 net), 1/2 cup tomato (4 carbs-1 fiber=3 net), 1/2 cup of cucumber (1 carb), and a cup of spaghetti squash (7 carbs) which is a total of 11 grams, leaving tons of room for eggs/cheese/cream/etc., and blows the 2-3 cups right out of the water. <shrug>

          General rule of thumb for success: If it requires a degree in chemical engineering to pronounce it, you probably shouldn't eat it.

            I usually have more veggies and keep it under 20 carbs including all the mayo and cheese etc...

            Just make sure to count the carbs and you should be fine. LOVE vidalia onions but onions in general have tons of carbs so watch that. You can rack up a hefty count if you stuff an omlette with a lot of em (The way I like it!)

              Thanks guys! I know DANDR says 2-3 cups but I was curious what everyone thought about eating more. Thanks for elaborating Brooke! I know you said you eat more and I wasn't sure about the carb thing! I think I have still been falling within range but I wasn't using fitday or anything..... I NEED TO USE IT! so here i go, I am going to see what all I ate yesterday and hope it was within range, although my weightloss has slowed so I am going to track it everyday!
