    I've had alot of people mention this, what exactly is it? Whats it taste like? How do you eat it?

    jicama = jícama = yam bean = Mexican yam bean = ahipa = saa got = Chinese potato (this name also is used for arrow root) = Mexican potato = Chinese turnip (this name also is used for lo bok) Pronunciation: HIH-kuh-ma Equivalents: One jicama, cubed = 2 cups Notes: This tan-skinned tuber has a mild, nondescript flavor, but a nice crunchy texture. It's a good, cheap substitute for water chestnuts in stir-fries. Since it doesn't discolor, it's also a great vegetable to serve raw on a crudité platter. Peel it before using. Substitutes: water chestnuts (These are more expensive and sweeter than jicama. Like jicama, water chestnuts retain their crispiness when stir-fried.) OR Jerusalem artichoke ( Like jicama, these can be eaten raw and they stay crunchy even when stir-fried. They're more expensive than jicama, but they have an earthier, nuttier flavor.) OR tart apples OR turnips OR daikon radish

    Now I love using it juliened up with chopped onions, celery and walnuts (when allowed..leave them out before I get there) and then mix up a dressing of mayo, vinegar, dab of mustard and a very small amount of spenda (same dressing I use for my potato salad) With the walnuts it reminds me of a waldorf salad as jimaca reminds me of a mix between an apple and a potato. I actually have a huge bowl of it made up right now in the refrig. As it doesn't ever get soggy (even when you cook it) it keeps for several meals. I've also shredded it and added cinnamon and splenda and then fried it...reminded me of cooked apples.

      Highly recommend the jicama! Good for when you just want something a little sweet. Or crunchy. Look for it in your produce aisle near the potatoes and onions. (At least that is where they keep it here)

        It tastes like a sweet water chestnut.

        My absolute favorite recipe for jicama is to make faux fried apples. Slice the jicama up thinly and sautee in a pan with butter until it's all brown. Add cinamon and splenda to taste. Can be eaten cold or warm. Keeps well in a tupperware container. I make a bunch and bring it to lunch each week when I'm teaching.

          I bought the jicama! The lady at the store ask me, "hun what are you gonna do with that?" I laughed and told her about the apple recipe and about your other ideas as well, she wants to know how it turns out. I'll be trying the fried faux apple recipe. Do you use the granular splenda or the packets? Got both just in case lol. Also bought heavy cream, cocoa, sugar free jello, cream cheese, sour cream and a few other things lol. I am prepared now, come on cravings!!!

              I don't use any splenda to make mock cinnamon apples. I make it with one sliced jicama, 1 can of diet cream soda, 1 packet of sugar free apple cidar, juice from half a lemon, 1 tablespoon of butter and lotsa cinnamon. Simmer it all together until the liquid is gone, stirring it up often. Mmmm mmmmm.

              Jicama is one of my favs because it takes on the flavor of anything you cook it with. My other favorite way to eat it is baked with cajun spices and lime juice with salsa and sour cream to dip it in.

                You GOTTA be kiddin me! Gosh that sounds good! Ok heres what i do. I slice em REAL thin, put em on a cookie sheet sprayed with olive oil Pam, then sprinkle with cinnamon and splenda. I bake em and watch them closely at 350 F. Once the pieces start to turn brown, they are getting crispy. I like mine crispy like apple chips. They get real brown before i take them out piece by piece from the oven. Delish! You can also mix up some cream cheese or whip some whipping cream and mix with a dash of caramel da vinci syrup to dip the crispy mock apple chips into, tastes like candy apples!

                    I use cream cheese, splenda (or stevia), almond extract and cinnamon as a raw jicama dip.

                      They didnt have any when I went to the grocery store today.

                      It is a standard item for me and I cannot for the life of me imagine why they ran out!!!!!!!
