    Good morning,
    I just wanted to let everyone know that I am alive and well and still kicking. I have been on vacation and unable to get to a computer much, but I have stuck to the plan! I have not gained any weight at all and might have lost a pound... Maybe.... You know how that goes. It has been so hectic lately that I haven't been exercising as I should, but I am being good and I wanted all my pals here to know that I haven't walked out on them.
    149.8/no weigh/ 119



    1st goal: 139 (earlier weight)
    what the rungs mean to me:
    rung 1 - more veggies
    rung 2 - dairy (some milk in coffee)
    rung 3 - seeds, nuts (mostly sprinkled on salads)
    rung 4 - berries, melon
    rung 5 - wine -
    rung 6 - beans, hummus
    rung 7 - other fruits
    rung 8 - carrots/ potatoes (nah, prolly not)
    rung 9 - whole grains (fresh Dutch breads...)
    Major Goal - 128 lbs/ healthy range
    (on to pre-maintenance)

    Hey Shannon!!

    Its good to see you here! Especially alive, well and kicking!

    Awesome being on vacation and not losing you woe! You are getting closer to your halfway mark all the time!

            Well, my kids had gone to stay with my parents for a couple of weeks and my Mom brought them back last week, so I took a few days off work. I live in Orlando, so we mostly did the Disney stuff. Epcot has a new ride, Soaring, and it is awesome!! It is so much fun.

            Anyway, I am back to work now. Blah!! I have been eating spaghetti squash like crazy, though. Thanks for the incredible tip, guys. Anymore great ideas? I want to try a new thing every week, but I am too lazy to look up new recipes.

              Have you tried the jicama yet?

              Lots to do with it............ One of my favorites!

                Jicama.... mmmmmmmmm!!! I'm also in lust with fried turnips!! and zucchini... and........ now I'm getting hungry....

                  I absolutely adore those green Japanese pumpkins, look for them in the hard winter squash area. They are, believe it or not, induction friendly, taste nothing like a pumpkin that we are familiar with. I slice it up (You will need a large, sharp knife) into like inch thick slices, spray it with Pam/Olive oil and bake it in the oven. OMG to die for.
                  Now I did read somewhere that the skin, which I also eat tastes like bacon and NO, thats not true in any shape or form, but it is delicious. http://japanesefood.about.com/librar.../aa102102a.htm

                      Ooh, I am going shopping soon. I tried jicama once on a salad and it was good! I haven't thought about that lately. YUM.

                          The only thing I don't like about jicama is that it doesn't get soft when you cook it. But it tastes GREAT!!! I like fried turnips better. They get soft and they have a bit of a sweet flavor.


                          Both are great substitutes for potatoes!

                            Finelly, Meijers is one of the stores I checked. They didn't have it. Grr....I really want to try it (especially with your method of making it). I'll have to hit another store, I guess. I have already tried Kroger, Meijer and VGs. Maybe time to hit a gourmet grocery store.

                              Health food stores should have them. That's where I found them when I first found out what they were. All the stores here carry them.
