    Re: Sour Cream Thingy

I need to try the sour cream thingy

I made this post ages ago, so I just C&Ped. Good breakfast ideas. The meatballs and breakfast muffins freeze well. The Edam/Gouda ones do not:

Gouda Cheese Muffins (I love these)

    Breakfast Muffin

I make these for my husband to take to work for breakfast. This is not my recipe, and I apologize because I have no clue where I got it anymore to give proper credit:

spray a 12 hole muffin pan with pam. In the cups place crumbled cooked sausage, ham, bacon or whatever meat you'd like. Add grated cheese such as cheddar, Swiss, Monterey jack etc. Don;t overfill with the meat & cheese. Fill about 1/2 or 3/4 at the most. Beat 8 eggs with a splash of cream and spoon mixture in to cups. Bake 350 degrees for about 15 min. They'll start to brown on the edges.

You can use any kind of meat, cheeses, veggies etc. Sometimes I chop fresh spinach and add to egg mixture before spooning in to the tins. I use pork sausage a lot, I think about 1 oz. goes in each cup, along with an ounce of cheese (for a rough idea of quantity)

Note: Hubby grabs a couple to take to work. I just individually wrap them in saran wrap when they're cool (I put in fridge to cool down) and place in a gallon freezer bag. Also, I skip the cream now. personal preference.

If it calls for large container I'm betting it's the 16oz one

Let's talk taste....so, how does it taste? I'm sitting here drooling over the whole "cream" issue because I'm such a FAN of cheese cake you have no idea to what lengths I will go to remake a New York Cheese cake from scratch! This sounds really really really, did I mention really?-good!

              Special Category Foods
To add variety, each day you can also eat 10 to 20 olives, half a small avocado, an ounce of sour cream or three ounces of unsweetened heavy cream, as well as two to three tablespoons of lemon juice or lime juice. But be aware that these foods occasionally slow down weight loss in some people, and may need to be avoided in the first two weeks. If you seem to be losing slowly, moderate your intake of these foods.

Are the brekkie muffins mushy? Do you think I could possible cook them longer to make them less moist. I like eggs but only if they are well well well done- I brown them and try to make them as dry as possible... Also do you just keep them in the fridge? How long are they good for?

The sour cream thingy- does it have another name? lol what does it taste like? Is it cakey or what is the texture?

                TIA!
Caution I BITE! clicky clicky..its tricky rikki!

The Brekkie muffins are not mushy, they keep a long time in a baggie in the friedge. I eat 2 for breakfast every morning. So good!

ok what did I miss? Was it that we should only have 1 oz of sour cream a day? Would there be more than 1 oz in a muffin sized piece do you think? I have the batter all mixed up in the fridge ready to bake. Added some blueberry Da Vinci syrup in place of the vanilla. Decided to leave the fresh blueberries out, trying to be sensible.

I used 10 eggs and 3 cups of sour cream which is the medium sized container
