  • Tomorrow is FRIDAY -- What FUN Foods do you have planned to Kick Off the Weekend?

    Hey Gang!

    Tomorrow is Friday night (our old "Pizza/Celebrate the Weekend" night). Do you usually have something FUN to kickoff the weekend with? I'm trying to search around and find an interesting meal to surprise DH with to replace the pizza night.

    If so, please let me know your fun, weekend Friday night foods here.

    You could make an induction friendly pizza. Bikergoddess has a great recipe, or another member posted one where you use ground hamburger as the crust. I found the best method of making this one to be:

    Brown 1 pound hamburger; drain grease
    Add in cheddar cheese
    Shape in to pizza crust shape
    I then bake at 350 degrees to brown a little on the top.
    Then add your pizza toppings
    Bake at 350 degrees until desired temp

    I love to make a "mexican pizza" out of this. I add taco sauce (be sure to check carb content), then a mix of mozz/cheddar cheese, then lettuce and tomoto. So good.

    I have also had it with cheese, mushrooms, pep. I love it.

      This recipe gets my vote!

      I am thinking of doing it myself.............. Sounds good!

      Edited to add:

      I am attending a family thing this weekend and will supply a caesar salad and dessert. DD is going to make up strawberries and cream and I am going to bring along the cheesecake pudding or some clouds for me. Saturday night is going to be our pizza night since we have company coming over. They will get a delivery but I will make extra of Bikergoddesses recipe for them to sample so they dont eat all of mine! Lots of fresh cucumbers on the side. I have a meeting long meeting on Saturday morning and am planning on flax muffins and a sliced up cucumber while the rest of the group eats their donuts. Lunch is to be ordered out and I never have a hard time finding something I can eat there. Steak sub in a bowl sounds good right now!

        Yum! Sounds like a winner!!

        One question: Do you brown the meat and melt in the cheese at the same time? Or do you form the meat into the circle and then apply the cheese whole on top to melt in and "seal" the meat crust?

        Just want to make sure.

          Friday night dinner will be some kind of Vietnamese / Thai squid salad with lemongrass, cilantro, mint, some chili, very little lime juice & fish sauce, grilled squid (of course) and a little bit of salad greens & sliced red pepper (or something along these lines). Does this count as fun?

            I brown the meat first, then drain. I then add in the cheese and form into pie shape. Helps hold the meat together.

            Terry, just so you know, this recipe is not bikergoddesses. I will try to find it for you. It is very yummy as well, but it uses egg and creamcheese. I'll see if I can locate it.

              Okay, bikergoddess pizza is as follows:


              4 oz softened cream cheese
              4 eggs
              1/3 cup heavy cream
              1/4 cup parmesan cheese (grated)
              1 tbs chives
              1/2 tsp Italian or pizza seasoning
              2 cups shredded cheese (I use mozzarella /cheddar mix)
              1/2 tsp wet garlic or 1/4 tsp garlic powder
              1/2 cup lowest carb tomato or pizza sauce
              1 cup mozzarella cheese
              Toppings to taste (I use pepperoni, sausage, green olives, whatever!)

              Beat together cream cheese and eggs till smooth.
              Add cream, parmesan cheese and spices
              Spray 13x9 glass baking dish with oil
              Put 2 cups of shredded cheese in dish and pour egg mixt. over Bake at 375 for 30 minutes
              Spread with sauce and then add your toppings
              Cover with mozzarella cheese
              Bake till browning and bubbly
              Let stand for 5 minutes or so.

                I do something similar with Eggs, italian sausage and parmesan cheese,bake it as a crust and then use lower carb tomato sauce (Hunts 3G 1/4 cup) + pizza toppings

                  Hum...but, ya know, I've never tried squid...that would be a first for me. Does it taste like chicken?

                    Squid? Interesting. I like to look at it for it's shapes, but not sure about eating it. I'll have to try it once. I said that about Sushi and I love it now.

                    WoW! That pizza recipe made me drool and my hips enlarge just seating here reading it! lol---note: hips already enlarged due to too much sitting and eating the real thing.

                    This weekend, tomorrow night, we leave to drive 12 hours to CA. I'm packing my cooler/tote full of stuff: pepperoni chips, cheese, salami, lettuce, cucumbers, jicama, ranch dressing, flax muffins, cream cheese, cheddar cheese, cheese sticks, celery sticks. And when we get down there I'll pick up some fresh tomotatoes at mom's along with some more fresh veggies like broccoli, cauliflower, etc. Dinner at mom's will be steak/shrimp, chicken and veggies, and finger foods (my kind of meals )

                    Weekends around here use to revolve around Friday Night Pizza/Family Night...thanks for sharing the recipe, truely I thank you because I'll add it to my list of things I'll try in the upcoming weekends.

                            Speaking of pizza, when on OWL, I usually take a low carb tortilla, fry it in oil, then add pizza sauce and toppings and bake in the oven. The frying of the tortilla makes it more firm. It is pretty yummy and filling.

                              I have done the same thing minus frying it up in oil ahead of time. It is pretty good.

                              Not during induction and when I can add them back in will have it again.
