  • Day 15 Check-In

    Hi,

    just stepped on the scale for the weekly weigh-in. Nothing has changed so far since last week, but 8 lbs down is 8 lbs down, even if it's just water, I still have to carry 8 lbs less...

    Got out the tape measure and found that the file where I kept the starting measurement scrashed . Sort of fits the day which started with bad news - having to find a new job rather soon ist part of it...
    Can't eat or drink because I am still angry and confused.

    I'm not quite sure if I should go on extended induction or OWL. Will probably try extended for the next two weeks. Right now I feel like renting a log cabin in the woods for 2 years, pack up my stuff and never come back...

    What I'll do instead will be get some cheese & ham for a chicken cordon bleu thingy tonight.

    Celebrate 8 pounds you could have gaind and not lost. New jobs are exciting look at it as an adventure. You have a great attitude keep it up. BTW tell me how you make your Cordon Blue I love it

      I would like to hear how you make that cordon bleu too. I always liked it and never gave it a thought with this woe.

      Good luck with the job hunt and be sure to read the section in DANDR about how to determine when to head into OWL. There is a quiz to help you decide.

      That cabin in the woods for a long break sounds like a really good idea to me this morning too! How peaceful it could be..........

        Yem....don't stress things will get better....remember tomorrow is always a better day.....But Congrats on the 8 lbs.....thats awesome....we should always celebrate our successes.....

              Chicken Cordon bleu... this http://www.titanic.kn-bremen.de/meat21.html was the basic idea.

              I use ham and regular sliced cheese - I found an Irish cheese by Kerrygold without nitrates & coloring agent at our supermarket.

              The adapted version: pound chicken breast (boneless, skinless) flat, spread a little Dijon mustard on top. Layer with some cheese & ham, fold over. Secure with toothpick if necessary (holds together quite nicely if you fry it in a hot pan). If you want it classic style, you might dip this in egg and then ground macadamias (love mac crust on fish fillets), but for me it works just fine without. In a large skillet, melt some butter or ghee or coconut oil, add your cordon bleu thingies and fry until slightly golden. (Adding some ground pepper seems like a good idea, too). The cheese should be melted and is probably oozing out (don't use too much )

              Now you can pour a splash of white wine (I bought a small 6-oz-bottle just for that purpose) or chicken stock into the skillet, let simmer for a few minutes and you're basically done. Of course you could add a little cold butter or mascarpone to make a real sauce. Sprinkle with chopped herbs of choice.

              I'm having zucchini slices with that, which I have just seasoned with Greek oregano and olive oil - to be grilled in a panini grill (you might call it a George-Foreman, I guess).

                Hey, Yemenite - I've often thought about running away to Tahiti or whatever. The urge to escape is normal. Of course, we can't give in to it on a permanent basis, but.......can you get away for a day or two?
