    Made this just yesterday. Got it from Bren a while ago.

    Breakfast Squares

    Ingredients:
    1 cup chopped mushrooms
    1/2 cup chopped onions
    1/2 cup chopped green peppers
    (you can use any veggies you like, spinach, summer squash, broccoli etc... just be sure to adjust carb counts according to what you use)
    1 cup grated cheese (I use sharp cheddar, may use swiss or whatever you like)
    Diced ham, sausage or bacon to taste.
    12 eggs

    Spray a 9 X 13 inch cake pan. Saute veggies in butter. Whip eggs, add meat, cheese and veggies. Bake 350 degree oven for appx 30 minutes until set in the middle. Cut into 8 pieces.

    This freezes really well. I wrap each portion up and nuke them about a minute when I need something quick.

      Another breakfast casserole recipe:

      1# ground pork
      1# ground beef
      1 cup diced onion
      1 cup green peppers
      6 eggs
      1 cup heavy cream
      1 cups shredded mozzarella
      1 cup shredded cheddar
      garlic powder to taste
      real bacon bits

      Brown pork, beef and onions and peppers. Once cooked, add garlic. Spray an 8 X 13 inch pan and layer the meat mixture on the bottom. In a bowl, beat 6 eggs and mix in heavy cream. Add cheeses keeping out a little of the mozzarella. Pour egg mixture over meat. It is pretty thick so you will have to spread it around with a spatula. Spread remaining mozzarella and bacon bits over the top. Bake 350 degree oven for about 30 - 40 minutes until middle is set.

      This also freezes well. One of my favorites!

        One day I had no idea for dinner...and had an over abundance of banana peppers in the garden and thawed ground beef. And a cravin for some type of cabbage type roll. I really don't have set amounts for putting this together...but I think this is fairly close amounts. I just kinda add til it looks right when I make them.

        Cabbage Rolls

        1 lb ground beef
        1 banana pepper finely chopped
        1 thin slice of onion finely chopped
        Red Hot sauce
        cabbage leaves
        salt/pepper


        Mix uncooked beef, banana pepper, onion, salt and pepper and a few dashes or so of red hot sauce together.

        Roll up in cabbage leaves.

        Place all in an oven proof pan. Cover top of rolls with hot pepper sauce. Cover dish and cook at 350 until meat is cooked. I have no set time...just til the rolls feel firm.

          Wintertime pumpkin breakfast casserole:

          2 eggs, slightly beaten
          1/4 cup pumpkin (canned)
          3 tablespoons heavy cream
          dash splenda or flavored syrup (caramel is good)
          1 tablespoon pumpkin pie spice.

          Mix ingredients and pour into a cereal bowl (can also be mixed in the cereal bowl if you are like me and hate wasting dishes)

          Place bowl in microwave for 3 minutes. Serve hot. May add cream if you like.

            Gazpacho (cold veggie soup)

            1/2 tomato
            1/2 cucumber
            1/2 green pepper
            1 scallion or 1/8 cup chopped onion
            2 tablespoons chopped zuchini (or more, if you like it)
            1 teaspoon salt
            1/2 teaspoon cayenne pepper
            1/4 teaspoon pepper
            dash lemon juice

            Place them all in a blender or food processor. Blend until liquified but still slightly lumpy.

            Place in fridge and chill for 1 hour.

            Serve garnished with parseley. Can be used as a dip with slices of jicama.

              Israeli salad:

              (people over there eat this for breakfast, lunch and dinner)

              1 tomato, diced
              1 1/2 cucumbers, diced
              3 scallions, diced
              1 clove garlic, smushed
              salt and pepper to taste
              lemon juice and olive oil

              Mix it all up, chill, and enjoy!

                    OK, I absolutely love these. From Dana Carpender 500 Low Carb Recipes.
                    I don't miss mashed potato at all anymore!!!

                    FAUXTATOES DELUXE

                    1 large head cauliflower
                    1/3 cup cream
                    4 ounces cream cheese
                    1 T butter
                    salt and pepper

                    1. Simmer the cauliflower in water with the cream added to it. When cauiflower is very soft drain thoroughly.

                    2. Put the still warm cauliflower in a food procesor with the cream cheese, butter and salt and pepper to taste and process til smooth. (I have a blender that I use for this, and I have to do it in more than one batch).

                    Yield: 6 generous servings, each with 6 grams of carbs and 2 grams of fiber, 4 grams of protein.

                      Heres one that I had for the first time last night. It was delicious and while it sounds complicate it really was pretty quick if you have a food processor.
                      Turkey, (or chicken or pork) Lettuce Wrap.
                      1 cup mushrooms
                      1 can water chestnuts
                      about 5 chopped green onions
                      Process until finely chopped.
                      1 package of turkey, or pork or chicken, ground up, Fry in a large pan and then when just about done, add the veggies and stir fry until just about done.
                      Add 3 T of soy sauce, 2 T of Splenda, 1/2 teas blackstrap molasses, 3 cloves garlic crushed, 1 1/2 teaspoons rice vingar or regular, 3 T EVOO. Add to the meat and cook until done and no pink left in the meat
                      Wrap a T or 2 in lettuce leaves, and dip into some Asian dipping sauce

                      Asian Dipping Sauce
                      1/4 cup of Splenda
                      1/4 cup of water
                      2 T soy sauce
                      2 T cider vinegar
                      2 T of low carb catsup
                      juice of one lemon
                      1/4 teas sesame oil
                      2 teas of dry mustard
                      minced garlic
                      caynenne pepper to taste

                      Messy but delicious. I just served lettuce leaves and we wrapped and dipped and wrapped and dipped and wrapped and dipped

                      This is also adapted from Dana Carpenters 15 minute low carb Recipes

                        Does anyone mind if I transfer some of these recipes to the Cookbook. One lady in Food Chat just asked about the Clouds Recipe and its not in the cookbook and Clouds are a Atkins ADBB staple. LOL
                        So I thought maybe I would transfer some of them to our cookbook.

                        I know some of them are from Cookbooks, and those I will leave out.
                        PM me if you would rather I didn't post your handle cause you know I will.

                        By the way Barde, I had the Cauliflower faux potatoes for dinner tonight with a slice of tomato and ham slice and they are delicious. Thanks for posting it.

                          Here's an easy easy Breakfast (or anytime)Cheesecake:

                          3 8 oz packages of Cream Cheese

                          3 large Eggs

                          Sweetner equiv to 1 cup of Sugar (really too much if you've been on Atkins for a while...can reduce to 2/3 or 3/4 cup equivalent)

                          1 Teaspoon Vanilla Extract

                          Preheat oven to 350 -375. Mix cheese and eggs, (I use a stick blender) add sugar substitute then vanilla. Grease the pan (I use 2 smaller pans and freeze one cake), bake until slightly browned.

                          Note: the original recipe required either a springform pan or placing the pan in a larger pan filled w/ warm water in the oven. I have no patience for this stuff and use no nonsense dispoable baking tins and it comes out great. If you try the more sophisticated baking method, it may come out even better!

                          What a luxurious WOL...Eat your Cheesecake and lose weight too!!!

                          Btw: I ate this constantly for breakfast when i did Atkins 2 years ago and did really well. This time around I'm staying away from sugar substitutes for a while...it helps prevent cravings for me.

                              Okay, the pictures are just making my mouth water big time!! I know what I'm making with dinner tomorrow night..or maybe even for lunch with my burger! lol!

                              Thanks for sharing everyone!

                              I don't have a picture for this one, maybe some day.

                              Chicken Burger Wrap:
                              1 pound of ground chicken...use turkey if you want
                              1/4 or less of chopped red onion...use what you want
                              2 TBL of parmesan cheese...I use the can
                              Nature seasoning
                              Garlic powder
                              1 TBL of butter
                              3 TBL of water

                              Mix everything together, except the butter. Make chicken mixture into 3-4 patty's and fry in 1 TBL of butter and 3 TBL of water...more if you want to really steam up the burger to cook faster. Cook until completely done.

                              Serve on lettuce wrap with your favorite additives.

                              Carbs vary depending on what you use.

                                Cheddar Cheese Sauce

                                Ingredients:
                                1 cup heavy cream
                                1/2 cup water
                                1 pound Cheddar cheese
                                1/4 teaspoon garlic salt
                                1 teaspoon mustard
                                1/4 teaspoon paprika
                                1/4 teaspoon Worcestershire sauce

                                Directions:
                                Use a double boiler or place saucepan into a larger pot of boiling water.

                                Add all ingredients, stirring very frequently until smooth (usually about ten minutes.)

                                Serve warm.

                                Note:
                                This sauce is great over vegetables - especially cauliflower and broccoli. Or add 1-tablespoon lemon juice to make a cheesy sauce for fish!

                                Recipe makes 16 servings.

                                0.8 carbohydrate per serving.
