Never had an artichoke! Sacrelige! Artichokes are one of my FAVORTIE veggies, hands down...
First off, I highly recommend the baby artichokes from Trader Joes or Costco over the full size ones anyday, but that is a personal preference... Cost wise as well as less likely to binge on them, and YES, I can eat myself SICK on artichokes.. but it feels worth it.
Basic prep..
cut off stem, and you can use a knife to cut just the tip top of the "crown"... my mom uses scissors and snips all the points, but I find that a waste of time that I could be using to eat the artichokes with. I dont cut them at all anymore. DO NOT lick your fingers after handling... raw artichoke is bitter-nasty, and the taste sticks... It is fun, however a bit cruel, to let the dog lick your fingers... and watch it try to get the taste out of his mouth. ONly did that once, and it was mean, but in a twisted way, funny as all get out. Stopped her from begging while I was cooking too.
Drop into a pot of boiling salted water. Boil until the bottom leaves pull off easily, and the top ones are easily spread with your finger.
Drain well, these suckers retain water like they are perpetaully TOM-ing.
To eat, drag the bottom, not pointy end through your teeth, scraping off the meaty flesh. As you get closer to the center, the leaves will become mostly edible. Discard scraped peices on an "artichoke plate". Yummy dips are melted butter, mayonnaise, mayonnaise with tarragon, mayo and deli mustard,, etc..
At the center is the choke... apty named. It is hairy and if you eat it, it gets all yukked up in your mouth and well.. you might.
BUT.. scrape of that part from the bowl like base of the artichoke, it is the heart, and the treasure in the middle.. mmmm.. artichoke heart is the best, especially on pizza.. atkins pizza of course.. mmmmm. Of course, you can buy these in a jar, but then you dont get to eat the artichoke!
These are also yummy cut in half, drizzled with oil and garlic and broiled, and once, skewered and grilled, thought the outside leaves were black, the inside was yummy. It took forever though, so that would be best with the baby ones.
AND, you can buy a can of hearts, a pkg of frozen spinach, some mayo and cream cheese, a bit of green onion and crushed garlic, mixed together and mmmm artichoke spinach dip.
