    Good morning all

    Very happy as hubby is back from his business trip.

    Just catching up with hubby and relaxing today. Did my workout at the gym yesterday so a non exercise day today.

    I have since re-gained a bit of weight, but that is soon to be coming off again!

      Good Morning Everyone! And a big TGIF!!! Just getting ready for work and finishing up my meals to take...Bacon and eggs, steak salad and HB Egg and pepperoni for a snack.

      Weather is miserable here..torrential downpours yesterday and more today...yuk...

      Gym tonight after work and that i'm looking forward to

        My looking-after-the-step-grandson-day today. Too busy to eat much, managed to swallow a couple of slices of bacon and egg. Will work out this afternoon and have a long long walk with the pram. Have a good day folks....

              Good morning, y'all!

              I spent yesterday evening doing a lot of lesson planning for NEXT week, so at least one part of my life is organized! That feels good.

              I'm looking forward to the weekend, but also to today. I just LOVE my class! (I know, I keep saying that, but if you knew how it was for me last year at the other school, you'd understand.....)

              Anyway, got my food, got my water, got the curling iron turned on, know what I'm wearing today, and it's ALL GOOD. Talk to you later.

                Doing good here. Feeling really strong right now. I'm resisting temptations and the hunger is starting to subside. I've been exercising, drinking my water and moving along!

                      Hello everyone! I feel good today - been "good" and I finally saw about a half-pound drop on the scales this morning and even better - I was able to zip up a smaller size pair of jeans this morning and still breathe! I get to wear jeans to work

                      Sweetie has steak thawing out for tonight and we're having the cauliflower faux mashed potatoes and salad with it. Even going to try a bit of packaged gravy - the label says 3 carbs for 1/4 cup which is plenty for my 'taters.

                      It has been a stressful week, but I made it through - had internal auditors here all week and my personal work got the greatest amount of compliments and fewest findings - woo-hoo!!! I can relax and enjoy my weekend now. I am responsible for the program to test the emergency shutdown functions on a chemical unit that has the potential to explode. I wrote all the test procedures and perform all the tests with the help of a field technician. I take it very seriously and it felt good to get an 'atta girl' out of it.

                        Yanno, with all due respect those packaged low carb gravies are usually not something we can have. Around here the ones I've seen are loaded with badness. Here are a couple of low carb gravy recipes for you, hope it helps you avoid the packaged garbage.

                        Pan Gravy
                        Ingredients:
                        • Pan Juices from Roast (chicken, pork, etc.)
                        • 1 cup Sour Cream
                        • 1 teaspoon celery salt
                        • 1 teaspoon white pepper
                        • 1 Tablespoon Kitchen Bouquet
                        Collect the pan juices from your roast. Skim off about half of the fat. Add all ingredients to the pan, blending over low heat. Be sure to use a wire whisk to smooth out the gravy. Never use high heat, as this tends to break the gravy. Makes 1 cup.

                        Total net grams of carbohydrate in recipe: 10.7 grams.

                        Atkins Diet Low Carb Recipes
                        Pork Roast Gravy

                        Ingredients:
                        Pan drippings from Roasted Pork loin
                        2 egg yolks
                        1/2 Cup heavy cream
                        1/2 tsp. Kitchen Bouquet®
                        salt and pepper to taste

                        After roasting a pork loin (remember to roast fat side up!), remove fat and juice drippings to saucepan and set aside. Beat egg yolk with cream and Kitchen Bouquet. Slowly add to pan drippings over medium heat, stirring constantly. Add salt and pepper to taste. Carve roast and drizzle a little gravy over each slice.

                        Makes 4 servings. 1.6 carb per serving.

                          Today is good so far. all my computers are back and working. I finished the first draft of my paper and sent it off. So, last night I was finally ABLE TO SLEEP!!!

                          today i've done nothing at all and i'm loving it. Except now i need a nap. ;-)

                            Thanks for the recipe starmaker. I didn't see it until after dinner or I would have tried it. I only put a Tablespoon of the packaged stuff on my faux potatoes and it wasn't very good, so I won't be doing that again.
