  • Flax crackers - zero carbs?

    Hi

    I love flax crackers and really enjoy having one with my breakfast. I just need to check - are they zero carbs?

    Zara - I seem to be losing this somewhere, can you buy them in the UK or do I have to make them myself? If so have you got a recipe?

      I count them as one carb. The fiber in flax seed is pretty much the same as the carbs, but there's a trace left over after you subtract.

      Squeaker: 3 tablespoons flax, dash of salt, 3 tablespoons water (or equal amounts flax and water). Mush up, spread out on a sheet of parchment paper or a greased plate. Microwave for 2.5 minutes.

        Squeaker. I found the flax powder (known as flaxmeal in America) in Holland and Barrett. It was quite cheap - about £4 and the crackers are delicious.

        I'm sure you realise this but parchment paper is what we'd call greaseproof paper.

        I do the same as Finelly. 2 Tbsp each of the flax and water. Pinch of salt. Mix together and leave to stodge up for a couple of minutes. Spread on to the greaseproof paper and zap 50 secs one side, turn over and zap for 1 min 10 secs.

            "Greaseproof paper" makes more sense than "parchment paper". I mean, it's not really parchment and you can't write wedding invitations on it or anything...

                To add to Holland & Barratt as a source for flax - many independant health food shops will also have the seeds which are quickly turned into flax 'meal' or flour by wizzing in a coffee grinder for a short time.

                You can also vary how long you do this and get coarse or fine 'flour' for different uses. My DH likes it ground quite coarsely for cereal.

                The seeds stay fresh longer than the ground flax which need refridgerating or freezing or they will go rancid after a few weeks I am told.

                I pay about £2.50 for 500 grams of golden flax seeds.
