    The last month has been really tough due to wanting to snack. What are some good induction friendly snacks? In the past, I had a lot of pork rinds amd string cheese. Thanks.

    In the past, I had a lot of pork rinds amd string cheese.
    Been there, done that, and did it alllll through the 80's. Now I can't even look at either.

    some snacks I love:

    16 slices of pepperoni,
    topped with 16 bits of an ounce of cheese,
    plus 10 green olives

    a stalk of celery dipped in 1 Tbsp mayonnaise

    a devilled egg

    take small cheese cubes and nuke them in the microwave to make cheese 'crackers'

    make mini quiches in well-greased muffin cups

      ooh I have one thats great (sort of like the mini muffin cups quiches! Cleo) Yummy, make it and the kids are fighting me for them. i make a huge batch of them at one time and nibble, nibble--nibble!
      Egg, Sausage, Cheese (add your own fav veggies!)
      I do 10 eggs
      1 lb sausage
      4 cups cheese
      minced onion

      whip up eggs (with a tsp of cream if you like), add 1lb sausage (I use sage sausage for extra flav) mix all together well add the onion. Put in buttered / can use spray muffin pan and top with enough cheese to cover and bake at 350* for about 20 min i think! May want to check them after a bit & see..

      another induction legal food i love is PIZZA!! Yes I will say it again PIZZA!
      8oz. <pkg of cream cheese - Pizza sauce (as low sugar as you can find)
      3 eggs
      1/4C parmesean (green can is OK)
      2 cups mozerella ch.
      2 cups Italian blend cheese
      1/2 tbl garlic powder/salt (i use with oregano in it)

      mix cream cheese (at room temp) with eggs, one at a time. Blend well then add in the garlic seasoning, parmesean and 1/2 of the mozerella cheese, 1/2 of italian blend cheese and spread in a large buttered glass baking pan (pyrex) and bake in oven till golden brown (look at the bottom to make sure its brown!) and then take out and cool for 5-10 min's then add sauce 1/5 cup should do, top with whatever you like (legal, dear) and the remaining cheese and WAH-LAH! Fabulous - bake till brown and bubbly..

      You can use the cream cheese and eggs recipe for a base to make other things that require "bread" it will have a definate bread-like texture. You can bake it up and cut into bread like slices and have "mock french toast" with sugar free syrup or add some cinnamon and a sprinkle of whatever sweetner you like and a drizzle of sugar free honey...endless possibilities!

        OoOooO Im gonna try your pizza recipe!!! Im allergic to eggs, but three doesnt sound so bad. Does anyone have any other good foodies that dont have alot of eggies in them???

          Pizza sounds.... interesting. I tried a recipe with that Atkins bake mix a while ago and it didn't do anything but cost me a lot on the ingredients. I'll give this one a shot this week.

            Yew, I don't like that Bake Mix either. Bikergoddess' Pizza is delicous also, ( I think you can do a search for it) and I make it quite often. The crust is eggs and cream cheese and herb, and then you spread the pizza sauce over it with your favorite toppings. After you bake and cool it, cut it into small sections and wrap in Plastic wrap.
            Clouds are a great snack also. (I think the recipe is in the cookbook) but I have to eat them all so I stay away from them.
            I like celery dipped in Ranch dressing.

              I sometimes make a pizza base from the microwaved flax bread recipe with some 'italian herbs' mixed in.
              Spread the 'batter 'into a large round oiled or buttered dish and microwave then turn out onto a pizza oven baking sheet, top with legal toppings and cook in the oven till the cheese has melted.
              My family dont realise it isnt a 'proper shop-bought' frozen pizza!!
              Wondering how to get 'most' of your net carbs from your induction veggies?

                Ok got my recipe out & after a refresher check realized its ONLY 4 oz of CREAM CHEESE!!! Anyone making it should use only that amount. Now I normally make a double batch of the stuff for 2 pies and thats why 8oz was stuck in my head (i double the eggs too) the family loves it.

                Now I hope everyone reads this because I made a BIG oopsie there!!!

                    mmmmmmmmmmmmmmm you all are making me hungry! I made chili tonight. I was picking out the beans because I forgot to make mine! The kids thought I was nuts!

                    I made that last time I was on Akins, it was an hearb bread and my brother loved it. He had 2 pieces.(small) with a diet rite.............mmmmm

                      Prep time: 10 minutes

                      Thought I'd throw some times in here for some of you. The cream cheese mixture took me about 20 minutes to get crispy enough when it was ~1/2 thick. Baking the pizza took around another 20 minutes or so - depending on how crispy you like your pizza.

                        sounds yummy! but what kind of sausage? cooked? likepepperoni? or breakfast sausage... which is uncooked....

                          My fall backs are pepperoni with cheese on top, nuked, and in a real fit, pepperoni, mozz cheese, mushroom, tomatoe and a bit of onion powder, nuked and mushed together (pizza snack I can make at work)...

                          Pickles.... olives.... I also do the nuke the cheese for cheese crackers.... roast beef and provolone rolled together and dipped in deli mustard.... turkey and havarti with just a tich of pesto ( I like artichoke pesto from Albertsons)... I am hungry now.

                          If you have the carbs for it, broil half a tomato with parmesan cheese and garlic on top.. mmm.. .

                            Now THAT is an INGENIOUS idea! Thanks Elizellen! Would a round dinner plate work? I tried to give you rep groupie points but it tells me I have to spread the lurv around before I can adore you again.

                            Can these be made ahead and frozen?

                              A dinner plate might do if you didn't mind it a bit thin on the edges and thicker in the middle.

                              I havent tried to freeze the recipe as it takes so little time to prepare and cook. Maybe someone else has frozen the bread and can tell us if it defrosts OK?
