  • Good Morning

    Happy Friday and even better for those of us who are home for the Veterans Holiday!

    In my quest to get and stay on the right track that leads to a happier healthier Atkins me I will be making a much better effort to get here every day to check in and see how everyone is doing. It does help to hang with your buds and breathe in all those good low carb vibes.

    So...... how is everyone? Seems pretty quiet here today. Im spending the day puttering around the house so we can just enjoy the weekend and relax for a change............... at least after we do a bit of winterizing around here. Pretty chilly today, time to cover some windows.

    I have had some chicken for breakfast and plan a caesar salad for lunch, burgers for dinner. I am nursing a large decaf dunkin donuts coffee and will get in 3 quarts of water.

    Realllllly is lonely here today.

    That must mean that everyone is off for a long weekend and are all having a great time enjoying this last break before the holidays hit big time. Or aliens have come and taken you all away to another planet. Dont let em feed you any carbs for lunch though because you will hate yourself in the morning.

      Hey...Josh Groban and I are HERE! This is my last Friday I am working for the next 2 weeks. Due to the show I am in and Thanksgiving, I will be working two 3 day weeks in a row.

        I know what you mean aboiut it being quiet. I really used to enjoy the daily check-in thread to see how everyone is doing but it doesn't seem to happen anymore?!

        I'm glad you are well. Are you over the headaches now?

          I am here! I am working at home today. The weather's beautiful in NC....wish I were outside. DH has today off but he is driving me crazy. He gets frustrated very easily and I have to listen to him cuss and slam things as he's working on stuff around the house. Ugh.

          I wasn't around when there was a daily check-in thread but I like the idea!

          I have been doing really good at journaling everything I ate these last several days. I am not eating perfectly (nothing illegal but still going over 20 carbs) but I am proud of myself for writing EVERYTHING down.

            From the aliens I've seen in movies they don't have weight problems, thus leads me to believe that they are all living an Atkins Woe in outerspace.

            I have been getting things ready for some lessons at work. We are doing a lot of Thanksgiving activities and planning our Christmas program. I'm done for the morning and decided to check in here and see whats happening before I go to work this afternoon. I have the afternoon shift today.

            Brrr, it is cold here too. I need to do some winterizing myself. Dinner tonight is meatballs and spaghetti squash. I have my family hooked on this as we are all meatball addicts. lolol

              What's your meatball recipe? (How weird that I don't know how to make meatballs.) I have just discovered spaghetti squash and think my DH might like it better with meatballs.

              Also, I have the hardest time cutting the raw spaghetti squash in half! Any pointers?

                1 lb. Ground beef or turkey
                2 eggs
                1 finely chopped onion
                1 small garlic bulb
                dash pepper
                1 teaspoon Italian Seasoning
                1/4 cup water w/tad bit of creamer to give milky appearance
                1/2 cup grated parmesan cheese
                1/2 cup very finely mashed pork rinds
                1 finely diced tomato

                Combine all ingredients. Shape into 1 inch balls. Brown in skillet or bake on broiler pain in 375 degree oven.

                My family loves these. We don't use the pasta sauce, however you can use low-carb. We usually just eat our squash with meatballs and add parm cheese over it.
                ENJOY

                Cooking the Squash
                I put mine in aluminum foil and bake for about 20 min at 300. Then it softens and I cut it in half. I put into a baking dish with water - cover it and let it cook about another 30-45 min depending on the size of the squash. Then, after it is done, I use a fork and comb out the noodles into a bowl.

                    Sharron... a few short weeks with long weekends will be wonderful for you. Good luck with your show!

                    Hey Zara! Its good to see you again! I cant promise that I will make it every morning during the work week but will try to start a morning thread. I enjoyed it as well. It would be a good way for me to begin my day with my head in the right place. Especially since I head to a kitchen for work.

                    Jamie writing down everything you eat will help you a lot. Have you tried fitday.com to log in all your food and let it do all the calculations for you? Men sometimes just dont do the frustration thing very quietly do they??!!

                    Becky, you have a point with those skinny little aliens. Seems they know something that we are just now finding out. Im making your meatball recipe this weekend. I love love love spaghetti squash and the meatballs will be good to have with them.

                    Time to start those burgers for dinner. Im wrapping mine in a low carb wrap with some cheese, a slice of bacon and a little onion.
