I have to admit, I am not a big vegetable eater - hate cooked vegetables of all kinds and can eat raw and have in the past. However, right now even the thought of a salad sounds so awful to me - what are some of the foods others eats? I would like some ideas on something other than lettuce! Thanks

What have you tried? I've found some amazing things just by trying new things and by cooking them in different ways. We eat cabbage a lot (it's pretty cheap). You can chop it up and add mayo for a coleslaw type salad, or we like it sauteed in butter too. I eat raw green peppers, celery and daikon (white radish) with lunch every day. Daikon is my latest discovery and I love it. You can make a broccoli salad (there's a recipe somewhere on the board). What about raw spinach? Different kinds of lettuce? If you keep trying different things, eventually you will come across something you really like.Female, 46yrs, 5'3"

I like baby spinach for salad greens. You can use kohlrabi as a substitute for apples or potatoes. Some grate it and use it for hash browns. Jalapeno peppers stuffed with cream cheese is wonderful! Try to be creative with the list of approved veggies.

Are you sure about salad not sounding good? What if you smothered it in Ranch dressing, real bacon bacon bits and shredded cheese? I wasn't a big salad eater either, but on Atkins you can dress it up really yummy.

This may be weird, but I thought I didn't like a lot of veggies either. Things I hated growing up now taste good to me. For example: I never in my life liked cauliflower. Now I do. I guess our tastes change over the years. So what you might think you don't like, give it another go. You may like it now.

Go and have a look at the recipe forum. you will find plenty of yummy way to eat your veggies. I started my cooking the veggies together with my meat. In this way you will be eating a whole meal, do not taste the veggies on their own and keep your fat intake up.

yep, roasted stuffed peppers are good, so are jalapeno poppers (you could bread them with parmesean cheese), try the kraft carbwell dressings - they're very good. my favorite salad is baby spinach leaves covered in carbwell ranch and grated parmesean - yummy! what about fautatoes (mashed califlower and add cheese - yum)
i tend to use the veggies like i used bread before - kinda a meduim with which to eat other foods
try these too - big lettuce leaves stuffed with lunch meats and cream cheese or regular cheese and fixings using the lettuce as bread to make wraps, or put some tuna salad (made with real mayo and parmesean) in those babies and roll 'em up like tacos - crunchy and satisfying!
there's so much more to veggies than salad - thank god!
my 6 year old son wanted to add this smilie lol!!!

These are all good suggestions and I have looked at the recipe forum and found some good ideas there too. I hadn't even though about cooked peppers filled with something - I should have, I eat a lot of raw peppers!
