    I have the best husband in the world!!!

    Today I came home from work, and the house smelled sooooo good!!! My hubby looked up a low carb recipe and made me the most delish red snapper with tomato & olive sauce! It was probably the best low carb recipe I have ever had. I was so surprised!

    He didn't want me to get back on this diet at first because I had a hard time with it in the past, but it makes me really happy to see that he is supporting me and not giving me a hard time about it.




    Here is the recipe:

    Seafood Fish-Snapper-Mullet

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 tbsp olive oil
    1/2 sm onion -- chopped
    1 cl garlic -- minced
    5 Greek olives -- black, pit and chop
    3/4 cup chopped tomatoes
    2 tbsp capers
    1/4 cup dry red wine
    1 pinch red pepper flakes -- optional
    2 tbsp butter
    1 1/2 lb red snapper -- fillets 750g

    The lusty flavors of classic Italian puttanesca sauce, tomatoes, capers, black olives have a wonderful affinity for firm-fleshed red snapper. Serve with Wax Beans with Garlic-Tarragon Vinaigrette
    Heat the oil in a large skillet over medium heat until hot but not smoking. Add the onion, garlic, and olives. Cook, stirring occasionally, for 3 minutes, or until the onion is transparent. Add the tomatoes, capers, wine, and red pepper flakes, if using. Bring to a boil, lower the heat, and simmer for 5 minutes.
    Meanwhile, heat the butter in another large skillet over medium heat until the foam subsides. Cook the snapper for 2 minutes on each side, or until lightly browned. Transfer the snapper to the tomato mixture in the skillet, cover, and cook over medium heat for 3 minutes, or until the snapper just flakes. Serve immediately. Serves 2

      I thought I had the best husband in the world!!! But....it is awesome what he did. I don't enjoy cooking, so coming home to a cooked Low Carb meal. He's amazing hands down!!

        Your husband is definitely a sweetie. My husband is extremely supportive as well. He will ask people what they put in sauce or spice, to ensure its something that I can have (I'm also diabetic). Can we say that's its a tie for best husband in the world?

              Well that is just the sweetest thing ever. My DH is very supportive as well. In fact, he fancies my low carb snacks - which can be rather frustrating too. He would dive into whatever i have set aside for snacking and leave his non Atkins snacks sitting in the cupboard. Good that he's not eating those unhealthy chips and chocolates, but, hey, hands off my stuff buddy!!

                Awe that's really sweet as well
                I'm sure there are a whole bunch of great hubby's out there...I guess we can be thankful that we found one!
