  • tried and true, old favorites, atkins comfort recipes...

    I already posted this on extended induction, but I was hoping that gang at STAC might pipe up and offer more ideas. hope it's not too terrible a no-no..

    what I had in mind was those meals that we keep coming back to over and over again. not the fancy ones, but the ones that keep us going throughout the week. failproof, easy, everyday.

    i can contribute my roasted eggplant and roasted cauliflower. i do these separately, just slice the eggplant into about 3/4", and put them on a cookie sheet with lots of oil, garlic powder and pico de gallo, or some type of hot spice.

    then put them into the oven on broil until they're a little brown on top.

    i do my "popcorn"cauliflower the same. same deal, cookie sheet, oil, same spices, broil in oven about 45 min, til they get crispy and brown. soooooooooo yummy, beware of portion control for this one.

    i always make a lot of these veggies, and keep em on hand for the week.

    lately i've been falling back on my egglpant pizza for an easy fix.

    put 3 leftover eggplant slices, put some cooked ground beef on top (I always cook a whole bunch, and keep it in little packs in the fridge and freezer, makes life easier) put on a tablespoon of tomato sauce, and a little cheese on top. NUKE IT! and its ready

    anyone have any old favorites they want to share?
    nothing fancy, just the good stuff that keeps you going
    faithful snacks, easy dinners, favorite breakfasts?

    I eat my flax cereal/cookie at least once (sometimes twice) a day. It's such a great standby, so delicious, and makes me all around very happy.

    The other thing I like is my "Whatever's In the Fridge" tuna cassarole. Generally this involves two cans of tuna mixed with 3 big dollups of mayo. Saute bag of green beans with mushrooms and chopped onions. Mix together in a large pan, add whatever else you like (heavy cream, cheddar cheese, moz, parm, black olives, more onions, broccoli, more mayo, pepperoni, tomatos) and bake for about a half an hour.

      "taco" salad use Brook's sugar free taco spice recipe to season browned ground beef then pick the salad veggies from the acceptable lists layer with the meat some shredded cheese if you like and top with sugarfree salas. yum yum



      then there is pumpkin "butter". mix 1/4 cup of canned or cooked fresh pumpkin with 1 ounce softened cream cheese and 1/2t pumpkinpie spice. use as dip for veggies spread on flax hot cakes or eat right from the spoon. ( y'all may want to sweeten with one of your sweetener servings but to me cream cheese is very sweet tasting now so i don't.

        those are great ideas,

        for a while i kept going back to chiles rellenos. they take some work, but since they freeze wonderfully, i just make a million and thaw as needed.

        I also got onto a hot-wings kick, but they take about an hour, and the cleanup is heinous, so i dont make them as often anymore.

        im going to break my own rule, but i have a fancy recipe i use a lot lately. it's fish carpaccio. it's basically very thinly sliced fish (slice while frozen so its easier), then sprinkle salt, pepper, lime juice, olive oil, and thinly chopped onions. oh, and my mom likes to put caper on top, but i dont like them. so there, it's fancy enough for a party, but i make it a lot at home since the fish is all ready and frozen.

        anyone else wanna play? I know you all eat every day.... somebody's gotta have more ideas!

          I make an aswesome spinach bisque. I makes enough for like 6 servings. So when I make it i eat it for a couple of days.

          Ingredients:
          8 ounces of cheese f(mont jack is best cuz of it's melting capabilities)
          garlic to your taste
          real butter about a tablespoon
          1 can chicken broth
          1 quart cream or less diluted w/h2O if cream causes u to stall like me
          1/2 cup H2O
          1 bag Fresh or frozen spinach
          salt to taste
          dash of nutmeg
          little minced onion

          mix all ingredients and cook on low heat. The longer you cook the better the taste. I cook for an hour or 2.

            I converted an old family favorite to Atkins friendly. I absolutely love this meal.

            Chicken Divine:

            Ingredients:
            2-4 chicken breasts
            curry powder - to taste
            1 1/2 can cream of chicken soup -15 carbs
            1 can chicken broth
            1 cup mayo or sour cream - mayo makes sauce thicker / sour cream runnier
            splash of dry vermoth - optional
            squirt of lemon juice-optional
            1-2 bags of brocoli florets - depends on how much brocoli you like
            1/4 -1/2 cup of parmesan cheese

            Perheat over to 350. Poach the chicken in the chicken broth (5 minutes?). Microwave your brocoli (5 minutes). In a small saucepaun mix the cream of chicken soup with the mayo or sour cream, vermoth, curry powder and lemon juice (2 minutes). Place the brocoli at the bottom of the glass pan, cover the brocoli with half your sauce. Drain chicken breasts and place them over the sauce and brocoli, pour the rest of the sauce and liberally sprinkle parmesan cheese on top. Cook for 30 minutes or until golden brown and bubbly. Voolah-delicious low carb and sooo easy.

              I second the taco salads, so good, and being on a diet where you can eat full fat sour cream just makes me giddy.

              I also really like doing stuffed mushrooms - my favorite is a version made with Italian sausage, cream cheese, shredded Italian cheese, garlic and herbs. So good, and great to take to a party too. They go over really well with everyone, not just the low carbers.

              A quick version of goulash is good if you want something warm and comforting - browned hamburger, mushrooms, onions with a little cream cheese/sour cream melted in, over cauliflower fauxtatoes. I like doing turkey breast served with "pumpkin potatoes" - canned pumpkin cooked down with cinnamon, nutmeg, and some Splenda until it has a mashed potato consistency - feels like Thanksgiving!

              And last but not least, anything with BACON!


              5 pounds away from a little reward - pedicure!!

                that goulash sounds yummy, the mushrooms sound great... but out of my budget , i'd eat way too many of them

                and the chicken divine seems like something easy and yummy

                i just spent a million hours cooking stuff for this week: I roasted 4 heads of garlic (makes life easier), made a biiiiiig tub of tuna salad, roasted way too much eggplant and cauliflower (gonna have to watch the carbs!), made a cheesecake, and made a ton of pumpkin soup. phew! tired!
                also sliced up some beef into fajitas and set it to marinade. i dont know what ill use it for, but i hope it will come in handy.
