  • Enjoying my meals this time

    I've really been making an effort this time to enjoy my meals a bit more, instead of just doing the ol' "grab -n- go" routine. I think it's making a difference. This morning, for example, after my asparagus & tomato omelet, I enjoyed a nice cup of herbal tea, complete with cream. I feel pampered instead of restriced.

    Am I in some kind of an Atkins Honeymoon phase?

    Tonight is the night I have dinner with my aunts, and I usually pick up fast food on the way down there. For tonight, however, I made up a quiche -- spinach, mushroom, and cheese w/no crust. I put it in their fridge yesterday and I'll call them on my way there to tell them when to put it in the oven.

    This could be kind of fun this time!

    I'm trying new things this time around too. Checked out the recipe section and made a couple appetizers, tried some new spices on my meat, threw all kinds of different things in with my scrambled eggs. I am sooo not the type of person to spend hours prepping dinner but I can throw stuff together just fine. The rest of the family is happy with the variety too and ask for repeats!

    The first time I ate the same things day after day because they were fast and it was working. Egg or tuna salad on cucumbers was usually my lunch and I can't bear the thought of eating either again for quite some time!
