  • Ooo Ooo, my new favorite Induction Breakfast

LOL, only going to share it with my fellow STACers.

Chop us some bacon, and toss into a hot pan, As the fat renders, add a thin onion slice and cook onion until translucent (what ever the heck that is, they always say tranlucent when cooking onions LOL) Remove the onion after its sort of brown, and continue cooking the bacon until crispy or how ever you like your bacon.
Drain the fat, (there is a limit) and kinna mound up the bacon and carefully break two eggs over the mess. I cover it at this point and lower the heat and let the eggs cook sunny side up, but you could scramble them if you don't like runny.
When the eggs are close to do, add the onion slice and sprinkly with cheddar or a slice of cheddar and cover again until cheese is melted

You can serve it with a tomato slice, or a spoon full of salsa or even sliced avocado goes good with it.

transluceint means you can see through them.

I do that but I'm too lazy to layer it so i cook the bacon and oinions and other vegies part way drain add the cheese pour the eggs over the top cover the pan and finish it on low heat. then just flip it onto the plate and the veggies are cooked the cheese is melted and the bacon is crisp. if you fo it on medium the cheese is crisp too and the veggies are browned for a slightly sweeter taste..

Im not an egg white person so I do the same as 2Big. It is fairly quick & easy and makes a good meal anytime. I struggle with breakfast and find that a salad is my best bet lately.

It would be so much easier if I really liked eggs.

Another good one is to chop up prefried bacon, saute a little onion, add the bacon just before adding two beat eggs, scramble together, and then just before done, add a tablespoon of cream cheese, and mix it into the scramble. Very good with mushrooms, green pepper, or salsa as well. But especially good when diced raw tomato is added after its plated. Oh....If you can have a little ham, its good too, instead of the bacon.

                    yum! Thanks for sharing

I'm lazy...so I like to cook my bacon in the oven on a cookie sheet covered with foil at 275 for about 20 mins or until the bacon is done.

Yeh-- I noticed it had a sweet taste-- I cooked bacon to almost a crisp, then just added chopped veegies, until tender. Then drained grease, cracked eggs on top, added cheese and covered. It was really simple, and tasted Yummy.

I am sick of scrambled eggs/ omlettes; so this was a good twist. I have a hard time eating fried eggs or sunny side without toast and hash browns, but the crunch and texture of bacon and veggies made it YUMMY!
