  • Hey! Thought I'd introduce myself.

After replying to a few posts, I figured I'd better introduce myself!

I'm from Southwest Louisiana - hit very hard by Rita. We have three kids - 17, 14 and 11. Two dogs, two cats and ..5 chickens. We are struggling to rebuild our lives after the hurricane and after months of feeling depressed and overwhelmed and tired and angry, I decided to give Atkins another shot. I need some stability in my life.

I followed Atkins 6 years ago and lost 50 pounds. That gave me the courage to get my dream job and I know work from home doing what I love. In the 5 years of working.. I have gained back all 50 pounds!

Time to get myself in shape for my own well being and that of my family. Losing my FIL in November of last year was very hard. I realized just how short time can be. When you add in family history and health problems.. I am shortening my OWN life! I gotta do something.

My husband is wonderful at helping me through the rough spots. My son oversees my exercising <grin> And the girls help with creative foods.

It's been 1.5 weeks now and I feel so much better. My husband says he can tell I have lost inches. I just feel better about myself knowing I'm finally taking control.

Remind me of all this self-help talk in 3 months HAHA.

I look forward to getting to know the folks on the board and sharing ideas and support. I did notice SugarFreeSheila was here! Hey!! I remember you from the AOL boards.

Time to scoot. Work to be done!

    Best wishes!

Re: Hey! Thought I'd introduce myself.

Nice to see you here. I'm from La too. A Chalmetian originally, but lived all over NO until I moved to TN at 18yo.

That 50 lbs is pretty awesome! That would be very good motivation. Send those girls of yours over to the cooking area with their tasty creations, hehe. I've made a roux with oat flour - still not that low in carbs, but when 1/3 cup is put into a gumbo, it doesn't add up to much and it is so much lower-glycemic than wheat flour. Just add lots of chunky stuff, which makes it good anyway! (Hard to make do without the rice, but it is good)

                  Exercise:
                  Slow Burn by Fred Hahn
                  raquetball
                  hockey
                  inline skating

                  walking with my kids

Thanks everyone! I've got a lot to learn about web message boards with all the tickers and such. Maybe one day I'll find the time to get my own.

No need to go without rice, hunny! Cook some cauliflower and then mash it with a fork! Instant rice! It soaks up the gumbo juice and you cannot taste the cauliflower. My sister didn't even realize it was not rice! Look and texture.. try it!

I cannot wait for that first cold snap. I'm sure the neighborhood will be filled with smells of roux cooking LOL
